I need some planning advise, pls!

Our trip: Disney trip planned on impulse 6days/5nights in Animal Kingdom Lodge (Sept. 7-12).
This wont be our only visit. We want to save Epcot for a longer trip. And AK for a trip during better weather.

Our family:
Mom-grew up with semi-annual (sometimes up to quarterly) trips to Disneyland until 10yrs ago when I relocated to the east coast;
Dad-been to Disneyland once in 2010, not really a Disney fan until we had kids;
4-year-old son is Buzz Lightyear's biggest fan, enjoys all things Disney, loves Tarzan and Lion King most. He is also asthmatic-how bad is AK in the humid months??
2-yr-old daughter who introduces self as Frozen's Princess Anna and enjoys all things purple - which includes Sofia and Doc Mc Stuffins.

Agenda, so far:
Day 1: Arrive MCO at 11am, DHS-Frozen Summer Fun, no ADR, skipping Fantasmic to enjoy the Frozen fireworks.
Day 2: DHS late arrival, in time for the Royal Welcome Parade, ADR 1240pm at Hollywood Vine's Disney Jr. Play n' Dine, take advantage of second Fantasmic and EMH night attraction/party.
Day 3: MK late arrival, FP for Festival of Fantasy parade and touring Fantasyland all day until close before closing at 7pm. ADR 7pm at Boma.
Day 4: MK at RD, touring Adventureland, Frontierland, Liberty Sq. + meet A&E FP+, ADR 12nn at CRT, FP+ MSEP.
Day 5: MK for morning EMH, touring Fantasyland during EMH and Tomorrowland the rest of the day, ADR 530pm at Chef Mickeys, FP+ for Wishes.
Day 6: Resort day with ADR at 930am at Boma. Depart MCO at 6pm (3pm pick up from AKL).
