My last visit to wdw was back in 2014, so before pandora, toy story land, and galaxy's edge came to be so my answers might be a little outdated...
Magic Kingdom- space mountain
EPCOT- Soarin'
Hollywood Studios- tower of terror
Animal Kingdom- Expedition Everest
I've got a trip planned for Oct 2022 so I'll have to see if any of the newer rides top my list!

Epcot-?? Remy’s Ratatouille is really cute and I enjoy Soarin’
MK- Pirates, Haunted Mansion, and (I’m in the minority) Tiki Room and Small World!
Epcot- Soarin’
Animal Kingdom- Flight of Passage and Expedition Everest
Hollywood Studios - Rise of the Resistance, Minnie and Mickey’s Runaway Railway, Tower of Terror

MK - Haunted Mansion, Pirates, Space Mountain
AK - Expedition Everest
DHS - Toy Story Mania, Slinky Dog Dash
Epcot - 3 Caballeros (yes, you read that right lol)
MK- Thunder Mountain, Splash Mountain, Haunted Mansion
Epcot- Soarin (though I preferred the original)
DHS- Rise of Resistance, Tower of Terror, RNRC
DAK- Safari, Flight of Passage, Everest (bummed that it’s on refurb)

I will preface this by saying that I love almost every ride but here are my must dos!
Magic Kingdom
Carousel of Progress - I Just love the nostalgia
Seven Dwarfs Mine Train - nice easy coaster.. lots of fun
Hollywood Studios
Mickeys Runaway Train - newest ride, love it!
Toy Story Mania - the excitement of this ride just never wears off
Slinky Dog Coaster - fast but smooth, great coaster!
Beauty and the Beast - A must see show for me!
Animal Kingdom
Safari - Never the same but always amazing.
Flight of Passage - Amazing what they can do with technology.
Nemo - Great show, not sure it has opened back up since closure. Hopefully by my next trip!
Epcot
Test Track - I feel the need for speed!
Soarin - not as good as the original but still a must do.
MK- Big Thunder/Carousel of Progress
Epcot - Living with the Land (lol I'm a nerd but I like it)/ Spaceship Earth
AK - Flight of Passages/Everest
Hollywood studios - tower of terror/Slinky dog dash
MK - haunted mansion, Big Thunder
EPCOT - Test Track, Living with the Land
HS - Tower of terror, Aerosmith (haven't been on any Star Wars stuff yet except Star Tours, which I'm not a fan of)
AK - Everest, Flight of passage
If I have to pick favorites... Slinky Dog Dash is my absolute favorite ride anywhere! It's fast and fun.. and I love Toy Story anyway...
Epcot - Frozen but everyone I travel with loves Soarin! I'm not a big fan of slow heights!
Magic Kingdom - Space Ranger Spin (there's that Toy Story connection again) for more of a sentimental choice and Big Thunder Mountain.
AK - Safari
Just one is too hard to choose. My top 2 rides in each park:
MK: Tiki room, Seven Dwarfs Mine Train
AK: Flight of Passage, Navi River
HS: Millenium Falcon Smugglers Run, Slinky Dog Dash
EP: Soarin, Frozen Ever After
MK: Space Mountain, Splash Mountain, Big Thunder Railroad, Haunted Mansion
HS: Rock n Roller Coaster, Slinky Dog Dash, Toy Story Mania
Epcot: Their festivals, Journey Into Imagination (Vintage/Nostalgia), Tres Caballeros (Vintage/Nostalgia)
