Considering some options of what direction I may take to start.
May not get to the magic place but every year with that being said
Question 1 What would 75 points get you? If I did use just those points
Question 2 Would it be worth considering (at this point knowing it will be every other year I would go) to purchase 75 points knowing I can bank them for a 150 when I eventually use them

Depends on season, home resort, and if you're just using the 75, or banking/borrowing to 150 or 225. I recommend looking at points charts, and assuming booking at home resort. DO NOT look at points charts for Boardwalk Standard or AKV Value and assume that you'll get studios at either, either at 11 or 7 months. (Yes, even at 11 months.)

Lots of people do. I would do a lot of research, though, around points expiration and home resort.
 
If you like OKW (or even just are fine with staying there), your small contract will go farther there. (AKV standard view studios are also a good deal - some love the resort for the theming and restaurants while others think it's too remote - so it still depends on you.)
 
Don't forget that if you decide to go every other year, you are still going to be paying your annual fees the year you don't go.

On the other hand if you had 150 points a year you'd be paying double the dues of that 75 point contract. The difference is the 150 points you pay over 2 years is slightly more expensive because dues go up.
