There's so much to do!!
California Grill is a great reservation to have on the list for those fireworks! I often like to do a little monorail trip before going there. I used to do a pre-dinner drink at Mizner's Lounge in Grand Floridian (that's closed now, but you could try our the new Beauty and the Beast themed bar there and tell us all how it is!). Plus, GF has a wonderful lobby to hang out in, you can listen to the band play, poke your head in the shops. Post California Grill dinner you could swing over to Polynesian for Trader Sam's. That's my favorite adult disney place. The Poly arguably has enough for a whole separate trip on a different day too: gorgeous grounds, you can also see the fireworks from there, dole whip, Kona Cafe breakfast, Ohana, Trader Sams.
Since you're staying at Coronado you could try out the new Toledo restaurant in the Destino tower, great looking lounge up there too. And the new floating bar and grill on the lake!
Disney Springs would make for a good night. Do some light shopping. Get a nice dinner (I like The Edison for its unique environment. And they have live entertainment late nights. STK and Morimoto are both incredible restaurants, though pricey). And if you want some entertainment, you could try out The Void. I did the Star Wars VR experience there and its truly unbelievable. Would love to do the Wreck it Ralph one too.
Animal Kingdom Lodge is fun to hang out in. Go in the afternoon to take in the animals from a lookout point (I think they book tours too?). And you could eat at Sanaa or Jiko.
Or Wilderness Lodge! Geyser Point is a wonderfully relaxing place to lounge with a drink, or eat lunch on a nice day. You really feel like you've escaped Florida, and get to look out over that beautiful lake. From the Lodge, you can take a boat to Fort Wilderness where you could have dinner at Hoop Dee Doo Revue (come hungry, they just keep on serving!), or roast some smores at Chip and Dale's campfire singalong and watch a Disney movie under the stars.
As others have mentioned: the Boardwalk is awesome. I recommend a dinner at Flying Fish. Incredible food. Tip: I would sit at the bar. Some of the servers there are sort of like automatons, but the bartenders are friendly and fun to talk to. One even gave my father in law a little peek at how they cook their steaks (over an open wood flame). And then you could head to the connected Abracadabar, listen to the dueling pianos at Jellyrolls, or watch Epcot fireworks from the bridge.
And keep in mind that all resorts will have holiday decorations up. So its worth it to hop around and see those!
