My question is really 2 questions in one - does either Universal Theme Park or City Walk offer night time light attractions such as WDW's Magic Kingdom fireworks, Epcot Illuminations, or Hollywood Studies Fantasmic?

If the answer is yes, can one see view/see such events from a restaurant in one of the 2 Universal Theme Parks, or one of the restaurants at City Walk, or one of the Universal Hotels?

What about Universal 360? We will be arriving in Orlando on Jan 1 evening, and leaving on Jan 8 morning.

Universal 360 isn't running right now.

It's unknown if and when there will be a replacement, although there is some construction work being done in the lagoon...

Universal 360 is history, work however is underway on a new nighttime lagoon show being created by a French company called Aquatique which creates water special effects shows.I believe they used the barges from Universal 360 to create a theatrical truss style set up on the floating barges,if you've been to the park recently you can see it over by the lagoon in front of Beetlejuice. The last pics I saw on another website show a huge amount of speakers and LED light set ups. This definitely seems to be a major nighttime show unlike the Universal 360 show which was OK but nothing over the top special.I've also heard rumors of a parade coming to the park but nothing solid yet.
