California Grill at CR and Narcoossee's at GF both have nice viewing for Wishes. At Rose & Crown in Epcot, you can see Illuminations from the patio. Also, a window seat at Japan's Matsunoma Lounge should give you a nice view. HTH.
There is one rarely used dinner/fireworks combo...
I went very big for my 20th Anniversary and chartered the Grand One (the 48 foot yacht on Seven Seas Lagoon and Bay Lake) and ordered dinner catered by the Grand Floridian. Quite the expensive way to go for just two people. (it was $350/hr tips and food not included)
We spent a couple of hours casually sailing about the lake and had a lovely time as the crew told fantastic stories of thier lives at WDW. After a wonderful dinner, my wife and I got to sit on the boat, tune in the Wishes music through the boat's massive sound system and watch the fireworks from just off the main gate to the Magic Kingdom. The viewing angle is perfect and there's even the reflections off the water adding to the magic.
After Wishes we took another tour about the lake and then back to the Poly where we were staying.
First year we headed to WDW they screwed up our reservations and for the hassel they put us through, they gave us reserved seating (standing) for illuminations right across from France. They have a boat launch there and they let us walk down to the water and stand there and watch the fireworks. Other then getting the passes from a top CM I don't know how to get them.
