We are thinking if booking this for the first time, but the reservation time is 6:30 - do we have to stay put until close to the show at 9:00, or can we leave, do some rides, and return?

That reservation time does not sound correct (may just be a "placeholder" time.)
Most fireworks parties begin about an hour before the fireworks start-time.

I know, seems so early ....

Different MK dessert parties have different start times. The Plaza Garden Viewing Party has a check in time 1.5 hours pre-show. It looks to me like you are going on a night where HEA is at 8pm, which is pretty common through the winter months. For comparison, the Tomorrowland Terrace party has a check in time of 1 hour pre-show.

But no, you don’t have to stay at the dessert party the whole time, you can come and go. You don’t even need to check in on time if so inclined.

When we do the Plaza party, we typically show up 45 minutes prior to the fireworks show time. It gives us ample time to eat and get to the garden for a spot. The buffet tends to be less crowded at that time as well.

I was wondering of this timing as well because my girls go crazy with sugar and it’s even worse being so late...so 45min less of them eating desserts is a good plan!

I haven't done it in a year and a few months, but the first time we went, the check in time was closer to the fireworks time, and we had to eat and move to the garden quickly. The next time (I think I've only done it twice?) the check in time was much earlier, and we figured we could use the time to enjoy at a more leisurely pace. We got in after about a 10 min line to check in, everybody sat down, we ate, and then EVERYBODY else BOLTED for the garden. I was confused, we made our way over to the garden earlier than expected, but there were more people already there than the first time we went.

I didn't see many of the items on the buffet replenished (it could be that the "extra" items weren't replenished that I noticed) throughout the night, but I might have just missed them.

But also, I would't ever think of going to pick up my wristband and then going somewhere else to do something......because that would involve getting through the people, getting in a line, doing whatever attraction it is, and then getting back......and that would make it too close time wise for my comfort. If you wanted to cut down on time there, I would just show up an hour in advance of the fireworks, and you would be able to get your snacks/treats at a nice pace and then get a spot in the garden.
