They premier movies onboard the same time they premier on land. I believe Finding Dory releases on June 17th. There are often midnight showings of the movies on the day they premier.

Do we know how long the movie is expected to run on the ships? I have a July 11th Dream cruise and if I can see it onboard then I can save the money and not eat the crappy popcorn from my local theater

First run Disney movies run much longer onboard the ships than they do on land. Since Finding Dory opens Jun 17th, I'm fairly confident that it'll still be onboard in July.
The Disney movies usually stay on the cruise ships til another newer movie "bumps" them out of the line up. On July 1st Disney is releasing BFG (Big Friendly Giant.) Spielberg is producing/directing, so that one will be the latest/greatest on your cruise, but Finding Dory should also be showing.
