While I don't have the exact recipe that DCA uses, I did some web searches for you, since we eat these a LOT here in my area of Los Angeles - tons of wonderful Armenian, Lebanese, and Greek eateries.
The recipes you want are found by searching for the terms KEFTA, KAFTA, KEFKA, KUFTKA, and LULE, while kebob is spelled KABOB, KABAB, KEBOB, etc. These spellings are variances depending on the nationality making the item. No matter what it's called, you are almost guaranteed a delicious treat.
The ones at DCA are made with only ground beef, but traditionally they are a mix of beef and lamb (like gyros) or all lamb. Chicken and turkey also make a nice and lighter meal.
