Here's my understanding of the abbreviations:
FE - Fish Extenders: In the hallways of the ship, next to the door to each stateroom, there is a brass clip in the shape of a fish. The crew uses these clips to leave messages for the passengers in that cabin: reminders for Palo reservations, invitations to gatherings, etc. A
Fish Extender is an item that hangs off of these fish clips to provide more room for drop-offs. The majority have several pockets and are of certain dimensions to fit in the space next to the door. Some are very elaborately decorated to add a personal touch to the stateroom (and also to make it easier to find your room when you are walking down the hall and every door looks the same). On our last cruise, we used a simple canvass bag with Disney characters drawn on it.
You are right on the money with your understanding of the use for these extenders. Everyone on this forum can sign up to be included in a small gift exchange, and whoever wants in will be provided with the stateroom numbers of all the other participants. Then, sometime during the cruise, you can go around to all of the staterooms and leave little gifts: bubbles, pens, magnets. Some gifts are very creative and obviously involve a lot of time to prepare. Some are Disney themed pens from the dollar store. The only restriction is that they have to fit into the fish extender. The real treat is not the expense of the gifts, but the anticipation that each time you return to your stateroom there might be a little surprise waiting for you! The kids absolutely love it, and the adults get into it, too.

As for DH, DS, DD, the H, S, D, etc. stand for Husband, Son, Daughter. The initial D is typically interpreted as either Dear or Darling. However, depending on the context, some have surmised that there may be alternate translations, some of which are not printable in this family forum.
Here is the lineup of our crew for this cruise:
Me, DW, DD-14, DS-11, DD-8
MIL, FIL, BIL, SIL, DN-2
(Mother and Father in Law, Brother and Sister in Law, Nephew)
numbers are ages as of the sailing date
We will stuff everyone into 4 staterooms.
