Favorite snack food to take to holiday parties....

spritz cookies
oreo balls
buckeyes (peanut butter balls dipped in chocolate)

and my new favorite: tiger butter (pkg white almond bark melted then mixed with 1/2 c PB, spread on a wax paper lined cookie sheet, then melt 1 c chocolate chips and spoon over mixture on cookie sheet and take a knife to swirl chocolate through mixture, let harden (fridge works quicker) then break apart and serve. YUMMY!

I always do Deviled Eggs. Im from the South and these were standard holiday party food growing up :)

Whenever I send them with BF to his work parties they are gone within seconds. You will find most people love them but rarely make them. As long as you can boil and peel and egg they are pretty easy to make ;)

Why do some boiled eggs have chunks that come off with the shell and others the shell comes off perfectly?
 

Why do some boiled eggs have chunks that come off with the shell and others the shell comes off perfectly?

This is the method I use for perfect HB eggs. Best tip is to use eggs a few days old.


1. Place eggs in single layer in saucepan.
2. Cover with at least one inch of cold water over tops of shells.
3. Cover pot with lid and bring to a boil over medium heat.
4.As soon as the water comes to a full boil, remove from heat and let stand.
5. Large soft-cooked eggs: let stand in hot water 1 to 4 minutes, depending on your tastes.
6. Large hard-cooked eggs: let stand in hot water 15 to 17 minutes.
7. When cooked to desired level, drain off hot water.
8. Immediately cover with cold water and add a few ice cubes.
9. Soft-cooked eggs: let stand in cold water until cool enough to handle. Serve.
10. Hard-cooked eggs: let stand in cold water until completely cooled. Use as needed.

Tips:
1. Never boil eggs. It makes them rubbery.
2. Use older eggs. Fresh ones won't peel properly.
3. To keep eggs from cracking while cooking (before placing in water), pierce large end with a needle, which will also make them easier to peel.

I have wondered that myself.

I boil my eggs for 3mins and then take them off the burner and let them set for 13-14 covered. I then immediately plunge them in ice water. Once cooled, I crack all the eggs and let them sit in ice water for about 20 mins. Typically the shells will slide right off but not always. I wish I could say I get perfect eggs everytime but I always have at least one egg that likes to be difficult and comes out a mess. I always end up mashing that (egg white and all) into my filling mixture. That way the eggs are really full!

Super easy Smokies!

One package of Lil Smokies (those little hot dog things, I use the turkey ones for less fat)
One pound bacon
Brown sugar
toothpicks

Cut bacon into thirds. Wrap a bacon piece around a smokie and secure with toothpick. Put onto broil pan (so grease can drip onto pan beneath - I buy those disposable pans for easy clean up). After you have rolled all of the smokies with bacon, sprinkle some brown sugar on the top. Cook at 350 until bacon is crispy (adjust temp as necessary - sometimes I turn it up higher).

This platter always disappears quickly at parties!
