We don't use the vouchers but we like to eat in the following restaurants where Plus Vouchers can be used:
Walts - Nice selection on the menu and if you time your meal just right you can watch the parade pass by if you ask for a window table.
Blue Lagoon - It's one of the nicest themed restaurants in the park with a good selection of sea food and Caribbean dishes. You really feel as if you have entered a beach front restaurant on a Caribbean island. Watch out for the pirates!
Bistrot Chez Remey - A great themed restaurant in WDS - fine if you like steak otherwise the menu is limited but the surroundings are fantastic.
Sliver Spur Steakhouse - This has become a new favourite of mine, nice steaks in a relaxing setting in Frontierland.
Steakhouse - Disney Village - Good range of steaks and other dishes in a huge Chicago style warehouse.
Manhattan Restaurant - Hotel New York - They serve a lovely duck dish here, and they have a good selection of wines too to wash it down with. But be careful and ask where the duck came from. Our CM joked that he had to catch it himself on lake Disney and the chef was having trouble removing it's blue waist coat.
It's my first time using the meal vouchers for restaurants in the parks in a few weeks (we usually just eat at the hotel).
I've booked for blue lagoon as I've heard good things about the food + the atmosphere looks great. The new Ratatouille restaurant also looks great so we've booked there too

Thanks for the tips. I've been thinking about Walt's, Remi's Bistro and Blue Lagoon. I'd almost taken Blue Lagoon off the list so I may rethink that now. I was wanting a good steak too- so happy to hear about the steak restaurants.
