We were in the almost identical situation as you. On our last trip before our youngest turned 3 and we were officially a family of 5, we decided to make our trip as low budget as possible but still stay onsite, because any trip after would be more money for tickets, dining plan, and resort(since most onsite resorts that sleep 5 are deluxes). So we finally tried a value and stayed at POP.
We were weary of ever trying a value and thought it would be too cheesy. Yes we were snobs. Well, we absolutely loved it!
We wished we would have saved some money on previous trips and stayed there when we could in one room.
My thinking was that we will have many future trips at POR or deluxes, so save some money now and try the value.
