Favorite Frittata Recipe?

Thinking of making a couple of these for Chritmas morning instead of standing over the stove making pancakes...plus, I do not like pancakes...so, what is your favorite recipe? I plan on one for the kids with the basics and one for people who are a bit more adventurous...but not too much.

I would appreciate your recipes!
 
I don't know if this is technically a frittata, but this is what I make...

Obviously eggs, and I add already fried western-style hashbrowns, green pepper, chopped Ready Bacon (or whatever it is called), salt, pepper and oregano, and top with hot sauce once it's done and served. Best served with Southern Style Grands biscuits. :thumbsup2
 
eggs, Broccoli, cheddar or colbyjack cheese, red potato frittata,
not sure of exact amounts but I think I use about 1/2 lb. of fresh broccoli (prefer that to frozen) microwaved or steamed then cut up into small pieces. Think I use about 6 - 8 red potatoes, microwaved with skins on til tender then when cool, cut into chunks. Place broccoli and potatoes in large saute pan, sprinkle with garlic powder, salt & pepper.. add about 6 - 8 eggs that have been scrambled in a separate bowl. Turn mixture so eggs cook. Sprinkle top with about 1 cup of cheese and then shut off flame...cover til cheese is melted.
