Not camping anytime soon in Disney buy just wanted to get some recipes you all love and that are quick and easy!!!

First, literally catch your lizard, there are more then plenty at the Fort. But they are small boogers so you'll havta catch a bunch.
The rough skinned, vegetarian lizards are your prey for the pan, never the smooth-skinned kind that eat insects. They are generally found in old hollow arborvitae trees, or in Panamanian kitchens. Mexian and Central American hunters cut a hole high up in the trunk and another lower down, and if the little reptile cannot be stirred out with a stick thrust in from the top, a few hot coals dropped down in make him pop out of the bottom hole. He is seized and kept alive until the cook is ready for him.

After skinning the lizard, dress and cut up the meat. Marinate it in sour orange juice, or in sweet orange juice acidulated with lemon juice. Add 1 teaspoon whole peppers and a dash nutmeg. After 3 hours, drain and wipe the meat dry. Season with salt, dip in beaten egg and in fine bread crumbs, and fry in deep, hot fat. Or it may be sautéed butter until it is brown and tender.

Seriously, fish is always a good camp'n food. Course ya can't eat the fish ya catch at Disney, it's strictly "catch & release" only, but ya can bring yer own and fish fry outside (which is way cool !!) and serve it with coleslaw and fried taters or fried onion rings and if ya do up yer own onion rings then you can cut them to be the real good thick ones, :thumbsup2

Oh, fish I'm game for any day of the week. I prefer bass filets, using Zataran's fish fry batter and lemon pepper. Another trick is to cut up some onions and bell peppers. Take a large plastic container with a lid, put the onions and bell peppers in the container. When you take the fish straight out of the fryer, put them in the container and put the lid on it. Let that baby sit for about 20-30 minutes. The fish soaks up that pepper and onion taste, and man it is fine!
Have tried it with catfish, but for some reason the bass just do better. Give it a try if you haven't already.

Bama Ed

PS - and if it has the word "Light" in the name, well, it's only good for watering down the stew.

PPS - doesn't Gordon Gee's comments released this week make you proud to be a fan of the Big 14? Vandy is glad they ran him off...

We like making chili in the crockpot. That way dinner is ready when you come back from the parks. For dessert we use tin foil and put a banana, marshmallows, and chocolate chips inside. We then seal it up and out it on the grill. You could really put any toppings and it would probably taste good!
