Fast Pass+ Scheduling Confusion

This is my first time using fast pass+, and my 30 day window opens in a few days. I attempted to try out the system so I would be ready, and went through the steps on booking fast pass selections. I've only tried it for Hollywood Studios, but it looks like you pick attractions from each of the two tiers and then the sites gives you about 4 different plans to choose from . Is this right or am I missing something?

I keep seeing posts about cancellations and times becoming available, but from what I saw on the site was that you have very little control over the time (it was pretty much take it or leave it).

Am I doing something wrong? I'm a bit confused, so if someone can explain the actual booking process I'd appreciate it! Thanks!!
 
Thanks, though I'm still a bit confused. I'm a visual learner so all these directions don't mean much if I can't see what the actual booking screen looks like. If you'll humor me some more (sorry I know this is a topic that already been talked about a lot, and I'm probably beating a dead horse here), when you say you can go back and change the times/rides, do you have to choose one of the predetermined plans and then go back into them and change them (where you are given more time options). I looked all over the choose a plan page, but there was no choose your own plan option or "skip this" button....
