I made my mom's peanut butter pie for a cookout with friends last weekend, and got TONS of rave reviews, so I thought I'd share. 
Mix together (until smooth) with hand mixer:
1 8oz package softened cream cheese
1 small tub of Cool Whip
3/4 Cup peanut butter
1 cup powdered sugar
If it seems a little runny just add a bit more powdered sugar (I actually don't measure it, I just continue to dump it in until it's the right consistancy - soft, but firm enough to hold it's shape).
Dump mixture into a chocolate pie crust (found with the graham cracker crusts in the store). Sprinkle with your choice of chocolate chips, tiny baking M&M's or even drizzle chocolate syrup on the top - be creative!
Chill in the fridge for at least 3-4 hours before serving.
