Fantasy eastern - What are the most popular excursions

Looking at Tortola, St Thomas and Castaway Cay. What are the most popular and therefore likely filled excursions? I know every sailing might be different, but are there 'must dos' and 'must don'ts'?
 
Tortola: Trip to the Baths (full day) or Trip to Virgin Gorda (half day) are basically the same excursion, a trip to see the Baths (a sort of cave formation made of large rocks on the beach of the nearby island Virgin Gorda). These do sell out. The biggest must-do of the eastern itinerary.

St. Thomas: Skyride to Paradise Point is a must-do at least once imo, & Disney sells tickets, but you can walk there from the boat so it's an on-your-own type of excursion. It's a gondola ride to a high point on St. Thomas that offers a great view. This won't sell out, & you can always buy same-priced tickets at the attraction itself if you prefer. This excursion can be completed within an hour, including the walk to & from the boat.

St. Thomas: DCL offers Magen's Bay Beach Break, but instead we chose to taxi to Magen's independently. This was very easy to do, as there is an orderly taxi dispatch service right at the dock, and a return dispatch service located at the beach. Taxis are shared: they spend about 10 minutes filling the taxi with tourists headed for the same destination. The exact same thing as doing the excursion via DCL, except faster, a lot cheaper ($8 per person each way, plus $5 for each adult to enter the beach), and on your own schedule.

While in St. Thomas, we ferried over to St. John and went to Trunk Bay. It was a snorkeling/swimming excursion booked through DCL. Trunk Bay is heaven on earth; just beautiful. On our next Eastern cruise (whenever that may be) we plan on taking the Skyride to Paradise Point. I've seen pictures and the views look breathtaking.

What is the difference between the full and half day baths excursion?

^ This. Except I would recommend skipping the DCL component and do it on your own. You can get to Trunk a good hour before the DCL group gets there. The beach will be almost deserted.
 
Full day is longer and includes lunch.
What would you recommend? We were looking at this over the weekend and think the baths would be a great excursion for our family -- son 5, daughter 10. Is a half day long enough to experience it?
 
For the St. Thomas and Tortola ports - ho much is accessible from where you get off the ship? Can you walk to shopping, etc. or do you really need to plan an excursion to see anything at the ports?
 
Tortola--the Baths (half day) was very popular. Neat trip but my DS 11 hated it.

Zip lining in St. Thomas was awesome--views of Magens Bay were gorgeous. No clue how popular it was because departures were staggered.
