Fancy Cake Recipes for a fundraiser

Well, since I see the post about a birthday cake recipe, I will go ahead and post this.

I am being asked to bake a cake for a fundraiser. And, I really do not even know where to start. Since it is a fundraiser, I thought it should be a very nice looking 'fancy' cake. Not just a cake-mix in a round or rectangular pan with frosting on top.

Surely somebody here has a really great recipe, that wouldn't be too hard to bake???

Where I used to work there was a woman who brought in her mothers secret Apple Cake recipe. I know that it sounds like just an apple-spice cake, but those things were decadent!!! To bad it was a secret recipe.

Anybody have a decadent cake recipe they can share.
 
Southern Living's Italian Creme Cake and Hummingbird Cakes are both great
Also I have a good carrot cake recipe if you are interested.
Italian Creme is a white cake with pecans and coconut with Creme cheese frosting and Hummingbird is a cake with banana in it.

I went to SouthernLiving.com, but I can't get the site to pull up any recipes. :confused3

They listed three Italian cakes. One of them was actually called EASY italian cream cake. Sounds right up my alley. LOL!

Any other suggestions are also appreciated.
 
I have a great chocolate rum cake that is SO easy, but it is heavy on the rum so might not be appropriate for all circumstances.

Bake a devil's food cake mix in a bundt pan. Just follow package directions.

Mix 3/4 cup rum and 3/4 cup light corn syrup (Karo)

When cake is done, wait 5 minutes, poke holes in the cake before removing from pan - pour 1/2 of rum mixture in. I use a bamboo skewer.

Wait 15 minutes and turn cake out of pan - poke holes in the top and pour in rest of rum mixture.

When totally cool - frost with Cool Whip (or 1 c. whipping cream whipped). You can decorate it with chocolate shavings - or even easier melt a chocolate square in microwave and drizzle across the top.

It is very impressive looking and tastes great.

If you didn't want to use the rum, I think you could substitute one of the syrups like they sell to add to coffee - hazelnut would be good.
 

Oooh, Red Velvet cake!!! Mmmmmm... I know they sell mixes down here and they are just delicious. I made one for my own self for my birthday. I didn't want to mess up one making it from scratch.

Sorry I can't help out with the "doctoring up a cake mix idea" I just use the cake mixes.
 
I have not tried this one -just the regular one that is a bit time consuming



Quick Italian Cream Cake
From
Southern Living

1 (18.5-ounce) package white cake mix with pudding
3 large eggs
1 1/4 cups buttermilk
1/4 cup vegetable oil
1 (3 1/2-ounce) can flaked coconut
2/3 cup chopped pecans, toasted
3 tablespoons rum (optional)
Cream Cheese Frosting

Beat first 4 ingredients at medium speed with an electric mixer 2 minutes. Stir in coconut and pecans. Pour into 3 greased and floured 9-inch round cakepans.
Bake at 350° for 15 to 17 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes. Remove from pans, and cool completely on wire racks.

Sprinkle each cake layer evenly with rum, if desired; let stand 10 minutes.

Spread Cream Cheese Frosting between layers and on top and sides of cake. Chill 2 hours before slicing.

Yield: 1 (3-layer) cake
 
Sour Cream Pound Cake



Prep: 20 min.; Bake: 1 hr., 30 min. Bake this delicious cake, and store at room temperature up to 3 days; or place it in a large zip-top freezer bag, and store in the freezer up to 2 months.

1 1/2 cups butter, softened
3 cups sugar
6 large eggs
3 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 (8-oz.) container sour cream
1 teaspoon lemon extract
1/4 teaspoon almond extract

1. Beat butter at medium speed with an electric mixer until creamy. Gradually add sugar, beating at medium speed until light and fluffy. Add eggs, 1 at a time, beating just until the yolk disappears.
2. Sift together flour, salt, and baking soda. Add to butter mixture alternately with sour cream, beginning and ending with flour mixture. Beat batter at low speed just until blended after each addition. Stir in extracts. Pour into a greased and floured 12-cup tube pan.

3. Bake at 325° for 1 hour and 20 minutes to 1 hour and 30 minutes or until a long wooden pick inserted in center of cake comes out clean. Cool in pan on a wire rack 10 minutes. Remove cake from pan, and cool completely on wire rack.
 
Hummingbird Cake


3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 teaspoon ground cinnamon
3 large eggs, beaten
1 cup vegetable oil
1 1/2 teaspoons vanilla extract
1 (8-ounce) can crushed pineapple, undrained
1 cup chopped pecans
2 cups chopped bananas
Cream Cheese Frosting
1/2 cup chopped pecans

Combine first 5 ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened. (Do not beat.) Stir in vanilla, pineapple, 1 cup pecans, and bananas.
Pour batter into three greased and floured 9-inch round cakepans. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks.

Spread Cream Cheese Frosting between layers and on top and sides of cake; sprinkle 1/2 cup chopped pecans on top. Store in refrigerator.

Yield: 16 servings
