Can a family of 5 stay in a studio or a one bedroom? I know they "sleep 4", but will they let you have five by bringing in a roller bed or let you bring an inflatable mattress?

A two bedroom will price us out.

If one is under 3 years of age, yes. If over 3, the one bedrooms at AKV (except value) and BLT when open will allow 5.
 
Some of the 1-bedroom villas at AKV and BLT sleep 5. They have a king bed, sofabed, and sleeper chair.

MS has been allowing people to put 5 in 1-bedroom villas at the other resorts, though the official occupancy is 4. These villas have a king bed and sofabed, you're on your own for bedding for the extra person. DVC doesn't provide cots.

Studios sleep 4.

DVC (and WDW in general) is strict about occupancy. Except in the case of the 1-BDRs noted above, they will only book a room up to its occupancy limits. Leaving a person off the reservation will mean that person won't be able to use DME, EMH or the dining plan.
