Fallish baked goods?

I'm hosting a meeting at my home next Tuesday at l0:00 a.m. for about 15 ladies. Any suggestions for a couple of really easy breads, coffee cakes, etc? It is going to be a hectic morning and I'm talking that muffins would be too much trouble to make. But, I do want to bake something and not get bagels.

Thanks for your help.
 
Here are a couple of recipes that we like that are easy. Or what about Monkey Bread? I have a variety of recipes that range from the regular cinnamon/raisin to an herb one & several with fruit - like raspberry preserves, pineapple, or blueberry. I believe this can be assembled the night before & kept in the refrigerator - then popped in the oven before everyone gets there. Let me know if you want any of those recipes. (Many/most use biscuit dough instead of frozen bread dough.)

Also, last Christmas I made Whispering Canyon Cafe's Strawberry Banana Bread the day before. It kept well for several days, actually, and we liked it better cold than room temp (not that it's not great room temp!)

Cinnamon-Topped Oatmeal Muffins
1 c flour
1/2 c raisins
1/4 c sugar
3 Tbl oil
3 tsp baking powder
1 egg
1/2 tsp salt
1 c milk
1 c oats

Topping:
2 Tbl sugar
2 tsp sugar
1 tsp cinnamon
1 tsp melted butter

Combine ingredients; stir until moist. Sprinkle with topping. (Double topping is better! ;)) Makes a dozen. Bake at 425 for 15 minutes in greased or papered cups.

Clyde’s Coffee Cake
2 c flour
1 1/2 c sugar
1/4 tsp salt
1/4 lb butter, melted
2 tsp baking powder
1 egg
1/2 c warm water
1 tsp vanilla
Combine flour, sugar, salt & butter. Reserve 1 cup for crumbs. Add baking powder, egg, water & vanilla. Mix only until moist. Pour in greased 8x8 pan. Bake at 350 for 30 minutes. (I usually double to make 3 dozen muffins.)


Strawberry Banana Bread
from the Whispering Canyon Cafe, Wilderness Lodge
2 tsp baking soda
4 eggs
1 c butter
1 tsp salt
2 c sugar
3 c flour
1 ½ lb strawberries
2 c bananas (~6 medium)

Grease two loaf pans & preheat oven to 325. In a large mixing bowl, cream the butter & sugar. Incorporate bananas scraping sides of bowl. Add the eggs one at a time, mixing thoroughly after each. Set aside. In another bowl, mix together salt, baking soda & flour. Add flour mixture to butter mixture & stir until blended. Add strawberries (thawed). Bake 60 to 75 minutes or until a toothpick comes out clean. Cool completely on a rack before inverting onto a plate.
 
How about pumpkin bread? The smell of this bread baking screams fall!! Taste great too!

Pumpkin Bread

1 C oil
2 C sugar
2 C Libby's canned pumpkin
4 eggs
3 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
2 1/4 C all-purpose flour
3 tsp baking powder
1 tsp baking soda
1 tsp salt

Mix first three ingredients then add eggs one at a time mixing after each addition. Add the rest of the ingredients. Mix well and pour into two greased loaf pans or one greased tube pan.

Bake at 300 for 1 hour.

Cranberry Bread

Recipe By :Betty Crocker's Homemade Quick Breads
Serving Size : 2 Preparation Time :0:00
Categories : Breakfast Breads

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups cranberries -- fresh or frozen
1 2/3 cups sugar
2/3 cup vegetable oil
1/2 cup milk
2 teaspoons grated orange peel
2 teaspoons vanilla
4 eggs
3 cups flour
1/2 cup walnuts or pecans -- coarsely chopped
4 teaspoons baking powder
1 teaspoon salt

Oven 350 degrees. Grease bottoms only of 2 loaf pans, 8 1/2 x 4 1/2 x 2 1/2 or 9 x 5 x 3".
Mix cranberries, sugar, oil, milk, orange peel, vanilla and eggs in large bowl. Stir in remaining ingredients.
Pour into pans.
Bake 50-60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes.
Loosen sides of loaves from pans. Remove from pans. Cool completely on wire rack before slicing.
Store tightly wrapped in refrigerator up to 1 week.

What about getting one of hte pillsbury mixes like the cinnamon one and making the bread from that? I know its not scratch, but they're pretty good!
