Well I picked a great day to start making fall foods! ;) Haven't done much cooking lately so I'm making up for it on my days off! ;)


Made Chocolate Caramel apples to take to work for halloween

AND Le Cellier's cheddar soup! YUM


What about you anything fun planned for Halloween? Any fall goodies you are looking forward to making/eating?

Ingredients:
1/2 lb bacon cut into 1/2 in. pieces
3 celery ribs cut into 1/4 in pieces
3 cups milk
1 medium red onion cut into 1/4 in. pieces
2 tbsp butter
3 cups water or chicken broth
3 dashes tabasco
1 cup flour
1/2 cup beer
3/4 lb grated white cheddar cheese
salt and pepper

In a soup pot start to brown the onion over medium heat. When the bacon is starting to get crisp, add the onions, celery and butter. Cook until the onion is translucent. Add the flour and incorporate with the butter. Cook for 4 minutes-constantly stirring. Add the water/broth and whisk. Make sure there are no lumps. Bring to a boil then reduce to a simmer and cook for 15 minutes, stir every couple of minutes. Add the milk and continue to simmer for 15 minutes. Do not boil after you add the milk. After the last 15 minutes, turn off the heat and stir in the cheese then the beer. Add the tabasco and season with salt and pepper. If the soup is too thick you can thin it out with some milk. Serve with your favorite bread and top with some chopped scallions or chives.

We made a chex style mix with candy corn called "Jack O Lantern Jumble" and tonight DD and I made caramel apples. Tomorrow we are making mini pumpkin breads in a pan that makes mini jack o lantern cakes, and I am making 2 pumpkin cheesecakes 1 for DH and one for DNephew.

I love this time of year!!

Last weekend we broke out the "Pumpkin Job" recipe again. Yum! :D

We made a chex style mix with candy corn called "Jack O Lantern Jumble"

We do a lot of Chex Mix around here, but I've never seen a recipe like that. Would you please share it with us?

Have been making soup, bread, and pumpkin stuff like crazy! But the family has about eaten their weight in chili/cheese dip and chips!

Chili/Cheese Dip

1 can Hormel chili with beans
1 can Hormel chili w/o beans
1 8 oz. block cream cheese

Melt the cream cheese in the chili either on stove top or microwave. Serve warm with tortilla chips.

I gotta start making the annual Halloween pot of chili. That pumpkin job would make the perfect dessert.

Pumpkin Job
16 oz pumpkin
3/4 c sugar
2 1/2 tsp pumpkin pie spice
1/2 c Jiffy mix or Bisquick
2 tsp vanilla
2 Tbl margarine
1 can evaporated milk
2 eggs
Optional: add 2 apples, sliced

Spray crockery with non-stick spray. Beat ingredients together (except apples) until smooth with a hand mixer. Fold in apples. Pour into crockery. Cook on Low 6-8 hours, High 3-4 hours. Top with cool whip or ice cream. Serves 6
 
Jack O Lantern Jumble

(from the Taste of Home cookbook)

4 cups corn Chex
4 cups rice Chex
1 cup salted peanuts
1/4 cup butter or margarine
1/4 cup peanut butter
2-1/4 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon garlic powder
1 cup candy corn

In a large bowl, combine the cereal and peanuts. In a small saucepan over medium heat, combine the butter, peanut butter, Worcestershire sauce, salt and garlic powder; cook and stir until butter and peanut butter are melted. Pour over cereal mixture and toss to coat.

Spread into a greased 15in x 10in x 1 in baking pan. Bake at 250 degrees for 1 hour, stirring every 15 minutes. Cool; stir in candy corn. Store in airtight container. Yield: about 2 quarts


I know it sounds weird with the peanut butter, but you really couldn't taste it. We made 3 batches of this, added extra candy corn, and found the cutest little Candy Corn shaped goodie bag to put it in for gifts.
