I just realized yesterday that the Food & Wine Festival will still be going on during our upcoming trip (11/12 - 11/20).

We were already (tentatively) planning two days at Epcot - Friday (11/13) and Monday (11/16).

Is the last weekend of F&W usually more crowded as people try to go one more time or less crowded since people might be 'done' with it by then?

We've never been to F&W and while we're not drinkers, the idea of snacking on new things around the WS sounded like fun. How crazy crowded do you think it's going to be?

F&W activity (and crowd) is pretty much confined to Epcot's World Showcase. Its the busiest on weekends and at night. If you go during the day on weekdays the crowds are quite manageable. At other parks, and in Future World, you likely won't notice a difference.

Since this will be your first experience with F&W I would suggest staying away from Friday unless you will be there at the open [11:00] and plan to stay a couple of hours. I think that Monday will be more enjoyable for you as the crowds tend to lighten up a bit after the weekend. We've been going down for the last 15 years during the last week of October and will tend to avoid late Fridays and never go on Saturdays. Just my two cents, but want you to have a good first time.

Our first time at food and wine was the Friday of Vet's weekend which was also the last weekend of the festival that year. We got there at 11AM and ate until about 4-5PM when we changed to Future World. I didn't find it too busy at all. Some lines were long but they went way faster than I was expecting. I don't think we waited for food for longer than a couple minutes the whole day.
The only time I was overwhelmed from busyness was over near Mexico. The layout of the food booths and the narrowness of that area made for a very packed area. We enjoyed it
