Patsy, here is Paula Dean's recipe.

1 (3-pound) chicken
Salt and pepper
1 onion, quartered
2 celery stalks
1 cup chopped celery
4 hard-boiled eggs, chopped
2 teaspoons seasoning salt (suggested: Jane's mixed up Krazy salt)
1/2 cup mayonnaise
1 teaspoon lemon-pepper seasoning
1/4 teaspoon ground black pepper
2 to 3 tablespoons chicken stock

Place the chicken along with the salt, pepper, onion, and celery stalks in a large stock pot. Cover with water and bring to a boil. Lower the heat and simmer until the chicken is cooked through. Remove chicken from pot, cool, and remove skin and bones. Reserve the liquid. Dice the chicken and place in a large bowl. Add the chopped celery, eggs, seasoning salt, mayonnaise, lemon-pepper, pepper, and some reserved stock and mix well.

Yum, that sounds good as well. I will have to try it.

All this talk about picnics reminded me of the times when my sons were young, and there was a group of women in my neighborhood and we would go on picnics with the kids...on weekdays, and usually we would bring a small grill and have hot dogs.

Sometimes we would bring bikes and ride together through the paths in the woods....Those were great days...If anyone's from PA, we especially liked Tyler State Park in PA...and we were from NJ, but it's a wonderful park.

If you were to babysit 3 kids all the same age, what age would you choose, and how would you occupy your 5 hours with them?

What ages would you stay away from and why?
 
Any age, I babysat from the time I was 9 till 18.

Baby's, well they mostly sleep, but I would have a play mobile depending on the age. (the kind that sit on the floor and they baby lays under).

Toddlers, read to them, have coloring books and crayons, puzzles, and other assorted toys.

School aged, make sure that their homework is done, first and foremost. Then we could go outside and play. Or they would be allowed one friend over as long as said friend's parents agreed and that they were told they had to follow my rules. I would make sure to have age appropriate things for them to do outside, frisbee, basketball, ect. because they would not be allowed out of the yard.
 
No thanks on the babysitting. I love kids, but I spend all day teaching them to read, so my two are enough for me when I get home.

i think 3 older kids are easier to watch than 3 babies, so if I had to choose an age I'd pick school age.
 
If I had to babysit three kids at the same time, I'd pick six and seven year olds. We'd play board games, watch a movie, work a puzzle, maybe make cookies (if it was at my home).
 
I would take three teenage boys. I have already done this. Give them a video game system enought controllers, soda and chips and they are all set.

I would choose babies. My son is still an infant, but I miss holding a little one :(.

Ok, I'll share the recipe that I'm making tonight. It's in the oven as I type.

Chicken and Cheese Rice Bake

1 can cream of chicken soup
1 cup water
1 cup uncooked long grain rice (I also use regular rice)
1/2 cup shredded monterey jack cheese (I also just use whatever I have, tonight it's a colby and monterey jack mix)
6 chicken breasts (I like to use thighs)
paprika
pepper

In an oblong baking dish, combine soup, water, rice, cheese and pepper. Arrange chicken bone side down on rice mixture; sprinkle paprika on top. Bake at 375 degrees for one hour or until no longer pink. Stir rice before serving.

Note: I cover it with foil because I've found that it keeps the exposed side of the chicken moist. I have also cooked it with boneless chicken. You just have to experiment to see what's best in your kitchen. I've never had to cook the chicken longer than an hour.

Here is a recipe that Shayla and I had made for our dessert tonight-

JELLO "POKE" CAKE

1 bx. yellow or white cake mix
1 (3 oz.) bx. red jello
1 (8 oz.) carton Cool Whip topping
9 x 13 baking dish
Optional flavor combination: lemon cake mix - orange or lemon jello

Bake cake according to package directions. While cake is cooling in its pan, poke holes all over with large fork. Mix jello according to package directions. Drizzle jello liquid over cake. Make sure jello penetrates all holes. Chill several hours or overnight. Frost chilled cake with whipped topping. Serve.
 
Patsy we call that Jello cake, but we add a layer of vanilla pudding under the cool whip.

Here is my recipe...
Ultimate Potato Soup

5 large potatoes, plus 1 small, diced
2 stalks celery, diced
2/3 cup chopped onion
2(14.5 oz) can chicken broth
2 3/4 cup half & half cream
1/4 cup butter, melted
1/4 cup all-purpose flour
2 cubes chicken bouillon
1/4 teaspoon ground black pepper

In a large pot, bring potatoes, celery, and onion to a boil in the chicken broth. Cook until potatoes are tender. Drain & reserve liquid.

Combine reserved broth and cream in pot. In a bowl, combine melted butter and flour, stir into cream over medium heat, stirring until thickened.
Stir in reserved veggies, bouillon and pepper. Heat through and serve.

That sounds yummy Susan. I have never used uncooked rice in dishes before.
Between the water and the soup, the rice plumps up just as if you were doing separately. It turned out with a little more liquid left than I like last night. Next time I might bake it uncovered for a change. That way a crust forms on the rice which I like also. You just have to play around with it to find a happy medium.:)

Patsy, the cake Shayla made is one we have done before also. Always a bit hit around here. Haven't made it in awhile though. Hmmm, sounds like another addition to my soon to make list!

We like a lot of different things. Since we live in Tampa, there's a lot to choose from. One of our favorite places is a hole in the wall BBQ joint. OMG is the food fantabulous.
