If I do any, it's during the week before Christmas. Usuallyl it's the Sugar/Spice Pecans for the neighbors. Every now and then I'll mix it up and make some easy candy but mostly it's the pecans.
1 lb. pecans
3/4 tsp. salt
1 tsp. cinnamon
1 cup sugar
1 egg white
1 tbsp. water
Beat egg white and water until frothy (not stiff). Stir in sugar, salt & cinnamon. Add pecans and stir well until pecans are completely coated. Spread the pecans on a large baking sheet and bake at 200 degrees for 45 minutes stirring every 15 minutes. Remove from oven when dry and toasty. When cool, store in airtight container.
