I did a "girls only" trip late August one year with just me and my dd's a few years ago. They were 5 and 6 and it was one of the best trips ever. Honestly FL is always hot, always humid and it can thunder any given day.
We hit the parks early, took a pool break and went back to another park in the evening. Tell the truth my two October trips were much more uncomfortable humidity wise than my August trip. So with FL you just never know. August is less crowded due to the heat and the schools in session so you can get more done in less time = more pool time
The only thing we did was budget more for water $$ instead of trying to hydrate at meals and at water fountains. I found the water bottle straps at the carts and let my dd's each have one. They seemed to drink more water if it was accessable all the time and the strap with the water and a sports top did the trick. It was also cold and good tasting vs the fountains.
Have a great trip and don't worry. Some people are going to throw you a wet blanket no matter what.
