etiquette after surgery (maybe TMI)

I also had to have a hysterectomy last Sept. I agree that meals were VERY helpful! Even if her appetite is off (mine sure was) her family will still need to eat. We had people that brought us food every other day for 2 weeks and it was awesome! Some made stuff while others just brought Chinese food or something. We appreciated it all!

I'm sure she will be thankful no matter what you choose to do to help her out! You're a great neighbor!

I got a tuna casserole that was great. One friend brought a gift card for a pizza place. Find out what her kids like to eat and buy for them.
 
If you have a bunch of neighbors, why not get together and gift certificate her with Merry Maids. I know they're a national maid chain, and they go to the home, clean it, and it would probably make her feel better to have someone else vacum and clean!

I'm also all about the food-gift baskets rock. When I had surgery, my friends did that for me and I was touched.
 
Sounds like I'll be cooking something... but what???

Here's a recipe that can be made and heated later or even frozen and heated.

Enchilada casserole


4-6 chicken breasts (depends on size) boiled and shredded
2 cans cream of chicken soup (low fat works well)
2 cans red enchilada sauce (I use on hot and one mild can)
1 medium onion
1 tsp ground cumin (I've left it out when I’m out and I don’t notice it)
1 tsp garlic powder
flour or corn tortillas
4 cups grated cheese (any kind you like for Mexican type foods)

Cook and shred the chicken. Mix together soup, sauce and spices in a bowl. Line a sprayed 9 x 13 inch pan with tortillas followed by 1/2 of the onion, chicken, sauce mixture and top with 1/2 of the cheese. Repeat exactly for the second layer. Bake at 375 for 30 minutes or until hot and bubbly.

It is easy, it's a lot like making lasagna. I have either made it for people or passed on the recipe and it's always a hit. We serve it with a little chopped lettuce and tomato and a big glob of sour cream. Yum....
