In the past, most everything was open including stores, quick service, and a number of the sit down restaurants.

Yep. They won't turn down an opportunity to let you spend your $ during EMH.

I haven't done EMH in quite some time but my recollection is that not everywhere stays open … it's just select spots and almost never includes any festival booths/kiosks. I found this answer from the Mom's panel last year re: the Food & Wine festival. Of course everything is subject to change (and the panel is not infallible).

"When it comes to Extra Magic Hours, the Global Marketplaces will close with the theme park at 9 p.m. but there are still some places for you to get something to eat if you're hungry around that time. If you're in World Showcase, you can keep enjoying your time there because there are a few Pavilions that stay open for you to try some international snacks. You can also grab a bite at Sunshine Seasons in Future World, which is also known to keep serving food well into Extra Magic Hours. Of course, restaurants that stay open late are subject to change, so be sure to check the My Disney Experience app when you get there or pick up a Times Guide when you arrive at Epcot for the day."​
