Epcot quick service vegetarian/pescetarian options

I love Epcot, but their quick service food options don't always appeal to me and my family, but we need to eat something while at the park the whole day. We are not big meat eaters, except for occasional fish.

Are there any other good options for us besides England's fish & chips?

Sunshine Seasons is the first thing that comes to mind, that has a wider variety of options to suit different tastes. Otherwise I guess it depends on your taste preferences?
 
Tangerine Café in Morocco has a vegetarian platter that gets rave review.
 
Tangierine Cafe also has a falafel wrap, and you can get small portions of hummus, couscous salad, or lentil salad there, too.

There's a crepe stand in France.

Electric Umbrella has veggie flatbread and a veggie sandwich on naan.

QS at Mexico has fish tacos, mexican salad, and cheese empanadas.

The cart at The Land is all vegetarian (fruit, veggies, cheese, hummus).

Les Halles Boulangerie has a brie, cranberry and apple sandwich, salad nicoise, and a cheese and tomato tart, and soup, a cheese plate, and quiche.

Liberty Inn has "chick'n"

China has shrimp fried rice, and vegetable curry.

Sommerfest has mac and cheese.

Sunshine seasons has shrimp stir fry, and more chick'n, vegan flatbread, and fish tacos.

Another vote here. My wife and I love this place and she as well is a pescetarian. She said the veggie flatbread at Electric Umbrella was surprisingly good. As far as parks go, we find Epcot the most accommodating to her needs.

Sunshine Seasons will probably have some good options for you. I also think the place in Morocco might have some options.
 
I think you'll do ok at Tangierene if you like MId Eastern/Morroccan.

I think there should be decent sushi for you as well at Tokyo?

What a fantastic list! I would add:
Katsura Grill in Japan: sushi, shrimp tempura udon, garlic shrimp (sauteed served with rice), miso soup & edamame
