Epcot questions

We will be at Epcot on a Monday afternoon the last week of October, during Food & Wine. Just a couple questions:

1. Do the Future World rides still run during Illuminations? If yes, do rides like Soarin and Test Track tend to have shorter wait times?
2. Do the World Showcase booths and stores remain open during Illuminations?
3. Nemo or Figment for the third FP option? I know neither is necessary, but since I’ll be picking one, might as well pick the one that tends to have the longer standby.

Just a note on 3, I find Figment is a slower loader and while the line is usually not long, the Seas is also rarely very long and is an omnimover (aka "people eater") so it constantly moves forward.

The park closes at 9:00, so wedwdw is correct. You MUST be in line before closing time to be able to ride.

As to the 3rd FP, flip a coin.
 

Well considering last October, the lines for Nemo and Figment for part of the morning and throughout the afternoon when we were there, I think it might matter. Pick the ride you like best. If you are planning on riding Nemo and Figment in the evening as it gets close to Illuminations time, it doesn't matter. We found that during F&W, the crowds were all in WS and the lines for everything if FW, including Soarin and TT were fairly short or non-existant. Be aware though that Figment usually closes at 7. I'm not sure about Nemo.
