Epcot QS or lounge options

I'm taking a quick 3-day solo trip, and plan to stick to QS and lounges for meals. I'm a longtime vegetarian/now pescatarian, so either veggie or fish/shellfish options only. I'm very adventurous beyond that and prefer either interesting food or interesting locations to something I could find easily at home.

When I'm in AK I know I have both Nomad Lounge and Satu'li Canteen as good options (going to try to hop over there in time for lunch and hit both), and at DHS if I stick around for lunch I may try to get a spot in the Brown Derby's lounge. I know I'll be in Epcot for dinner (if not both lunch and dinner) and honestly, I'm underwhelmed with my options, at least in World Showcase which is where I'd prefer to spend a chunk of my time. Unfortunately it looks like lots of the more interesting meals there are limited to table service, and I'd rather not go that route (for time, budget, and flexibility reasons). Tangerine Cafe might be my best bet for a full meal, or I could potentially snack around a few different places.

What would you do?

EDITED: Or, should I change my plan and do a sit-down that night with a view for Illuminations? I'm not totally opposed to doing that and it looks like I could get La Hacienda de San Angel or Spice Road Table, probably among others...

I don’t have any dietary restrictions so haven’t looked at menus from that perspective, but really like the Epcot lounges — La Cava for some chips and guacamole, Tutto Gusto for a cheese plate, or Spice Road for some hummus. If looking for something more substantial, you’re a brief walk out the International Gateway to either Flying Fish or Bluezoo - both with outstanding fish items - and could make it back into the park for Illuminations if you go early enough. Or I *think* (verify) both would seat you after, IF you exited the park quickly. Bluezoo may have slightly later hours.
 
Tangierine Cafe is usually my choice even over the table service options. I'm not overly impressed with WS table service spots these days...

Their vegetarian platter is delicious and huge (I'm not vegetarian but typically choose it). Plus seating is typically easy to find!

Spice Road w a view of IllumiNations would also be a good choice!
 
In World Showcase Spice Road is a favorite, I usually go for the Olives and Hummus plate as a light bite. During my trip last week I ate at Flying Fish twice - both times walking up without an ADR and sitting at the bar. Choosing a couple things off of the Appetizer menu and having a drink came to about $55 each meal. I highly recommend eating there... I get happy just thinking about how delish the food was.
