Ok, I feel a lot better know. Thank you all so much, we will leave our days as they are.
I heard about the pick a pearl and we worked that into the schedule. We also took out Mission Space after reading about all the health alerts and replaced it with Space Ship Earth.

As others have already pointed out, you do get to design your car with FP for Test Track, so with the 8:05 ADR for Garden Grill (we've done that time before, the restaurant is empty and you will get seated right away and the food comes quickly, so being out by 8:45 is very doable), I would head straight to Soarin' first, then hit up Living with the Land before cutting across FW to get to Test Track, which I would FP.

If you can find sometime to fit in the Living Seas area then it's really worth checking out and a ride on Spaceship Earth on your way out is a great way to end the day.

The issue I see for you is that test track and mission space are clear on one side of the park while Soarin is on the other.

How far is the walk from test track to soaring?

It's family style all-you-care-to-eat, so they bring the platters of food to your table and replenish as often as you want. For breakfast, they brought us the cinnamon bun & fruit first and then the hot food (eggs, sausage, waffles, etc...). So you get the benefit of all you can eat of a buffet, but without having to get up and get in a buffet line. I always really enjoy the family style meals.
