Epcot FP+ can't do Tier 1 rides?

I'm prepping myself to get ready to book fast passes for our upcoming trip. It will be my husband and I and our 2.5 yr old.

To my understanding, at Epcot I can book one Tier 1 ride (Soarin, Test Track, Illuminations) and two Tier 2 rides. I CANNOT book three Tier 2 rides (correct?)

So here's where the problem lies: my son is too small to ride the Tier 1 rides. I really don't want to use it on Illuminations since, A) we don't know if we'll keep our son up that late and B) it will prevent us from booking more fast passes later in the day.

Any recommendations??

Yes, that is correct. Only one Tier 1 FP+. There really aren't any other rides that you NEED a FP+ for in Epcot so you could:

a. get a Tier one FP and just not use it
b. get a Tier one FP and use a Rider Swap so you and your husband could ride

Living With The Land is a Tier 1 attraction, probably to fill the exact need that you have.

You also might consider getting a FP for Soarin' or Test Track and then do a Rider Swap. You go first while your husband stays with the child. Then your husband goes on the ride while you stay with the child. If you do this, you can get a FP for Test Track and your husband can get one for Soarin', and you will effectively get to FP both of them.
