Epcot Food and Wine Culinary Demo ?

Last year on Sept 25 (first day of the Food and Wine Festival) there was a Culinary Demonstration at 1 p.m. with Chef Douglas Rodriguez. It was a tuna dish. Does anyone have the name of what he prepared for tasting?
