Are most restaurants and quick service restaurants open in Epcot during the late Extra Magic Hours (9pm-12am) I've always took advantage of the extra early hours, but I have never been at night.

Yes,many are,though some close "early".

Here is an old EEMH Times Guide.It will give you a good idea of what is "usually" open.
