EPCOT between the festivals

We are heading down the week of Thanksgiving as our official start of the holidays. We are going to go to EPCOT on the 24th and noticed that the Food and Wine Festival is not officially going on and neither is the Festival of the Holidays. Does Disney just shutdown all of the food booths and such during that week just to reopen them a week later for the Taste of the Holidays? Do they keep the booths unofficially open so they can continue to sell stuff? I know that they didn't do it last year but was wondering if anyone has experienced or heard of anything that they will be doing during that week.

Generally yes.

Do they keep the booths unofficially open so they can continue to sell stuff?

Never seen that before so doubt they will in future.

When the festivals change, the booths usually reopen with different names and always or almost always with new menus. It's not one year-around festival with different names depending on the season. It's a series of different festivals with breaks in between.

If you're between festivals, the booths will be closed. But there's still lots of great food and drinks all around World Showcase!

You mean it's actually a park with rides for a few days of the year.
