Entertain kids at night?

We are used to spending our evenings inside a park at Disney. We love Fantasmic & Wishes, love riding rides at night and just walking around the parks. Even on ouf off-days or after a shorter AK day, we will spend time at Downtown Disney. We're "doing Universal" this year I'm wondering what we'll find to do after the parks close (7pm during our mid-April visit). City Walk seems geared for adults (just bars and restaurants).
Our party consists of a few adults and (2) 7-year-olds. They like to stay up late on vacation. We're staying off-site and while our hotel has a pool, I can't see us swimming all night, every night. I'd love to hear what others do after dinner when the parks are closed.
We'll have a car, so maybe driving to DTD is our best option?
 
Last September was our first trip to Orlando without WDW. I wondered the same thing!

We stayed off-site close to DTD last year and did US and IOA. My kids were 10 & 12. We never ate dinner at either park. We ate around Orlando as well as booking for Ohana one evening. I arranged our ADR there around Wishes so we were able to see it from the dock.

We went to DTD twice. We played mini-golf one evening. We relaxed at the hotel pool twice. We spent one day just shopping around Orlando and then went to MNSSHP. We spent one day at Typhoon Lagoon.

All in all, it was one of the more relaxing trips we've had. My kids are not early sleepers and we're all used to closing the WDW parks down. Truthfully, as much as we enjoyed MNSSHP, it was the one thing I wish we'd skipped. The relaxed pace was nice for a change; at least for us!
