EMH late night snacks in MK?

When MK is open late for EMH (really late... like between 11 pm and 2 am), is Aloha Isle open for a midnight Dole Whip snack? (or, for that matter, do they even stay open until the 11 pm closing?) If not, is there a list somewhere of snack stands/restaurants that stay open during evening EMH?

On a related note, I would imagine that most, if not all, of the Main Street shops (well, these days I should almost say the Main Street shop... singular) stay open, but what about other stores around MK? Again, is there a list of who stays open and who doesn't?

I found a list of the attractions that are open during EMH on WDW website, but not stores/restaurants.
