Don't underestimate pneumonia. Anyone who comes back to work after a couple of days off completely recovered almost certainly did not have pneumonia. At med school, I was taught a rule of thumb of "1 day recovery for every year of your life" so even a 21 year old is likely to not get back to normal for 2-3 weeks after the illness.
Discharge from hospital does not mean "(completely) well", it means "well enough to go home (and recuperate). Your daughter will enjoy WDW more if she is not breathless and fatigued.

OP, I am so glad you made the decision you did. What a good parent, to sacrifice all the planning you made over 18 months to ensure your daughter was able to really enjoy it, and you wouldn't be worried about her health!

I had pneumonia as a child at Christmastime and was dearly upset that I was to miss a planned day with my older, married brother and his new wife: going to cut down a real Christmas tree (we always had a fake one, and my Mom would spray pine scent around and tell us it was the same thing) - and then off to the newlyweds' apartment to bake Christmas cookies. All of my sisters went, and I had to stay home.

I well remember laying on the couch, looking at our Christmastree and I literally was too weak to get up. Not only could I not have hiked through the woods, I really wouldn't have been able to stay upright enough to frost cookies. Weak as a kitten!

Please let us know when you finalize your arrival date in October - we're leaving on the 23rd and I would leave a gift for your daughter if we crossed dates.
 

I agree with rescheduling. I am 43 and in otherwise excellent health, but I had pneumonia in June and it was a good MONTH before I was really feeling completely better. I was not hospitalized, but missed 7days of work (desk job). While kids tend to bounce back quicker, there is no way to know how she will be feeling in the coming weeks. Hope she's better soon!
 
I am not suggesting this is good advice....just my opinion.

With that alibi out of the way, I would not cancel yet myself. Give it a few days, she may recover a bit and by Sunday, she may be OK or OK enough for Sunday....even better by Monday and having a great time by Tuesday.

If by Saturday things don't improve, I suspect Disney would still work with you on if you have a Doctor's note. Who knows, that Doctor may be overly concerned about being liable for not telling you to cancel.
