Eliminating WHITE CARBS/ need more protein snack options

I've surviverd the last FIVE days with NO:

bread/cereal/oatmeal
potatoes
crackers/chips

I have had wild RICE and that's because I really enjoy Healthy Choice entrees for lunch and the rice has been in there.
I'm not doing this for a quick weight loss, more so to eliminate worthless calories. I did it years ago after reading about South Beach and was able to keep up for a few months. After over enjoying myself during the 4th of July holiday, I decided I needed to purposely follow a better "diet" and this is what I was familiar with.
Has anyone else tried this eating plan and what protein SNACK type options did you find?
 
I have also cut out all white carbs. I find I feel better doing so.

I am a cheese and veggie fan. Favorite snacks are cream cheese stuffed celery, or cucumber boats with cream cheese. Sometimes I will put tuna in the boats instead.
