Am I imagining things - or is there such a thing as "powdered" eggs?

Also, can Egg Beaters be frozen?

I need a way to have eggs on hand all the time - in case I need them for baking or what not - but don't feel comfortable using eggs that have been in the fridge for an extended length of time..

One of the times I came down with food poisoning and was hospitalized for a week, it was due to egg salad - so I'm very leery where eggs are concerned..

Not only can you freeze them yourself, you can purchase them already frozen. Egg Beaters — one brand of egg "substitute" — are, after all, essentially nothing but egg whites, and you can freeze egg whites with very little problem.

The various companies that produce these substitutes say that you can keep them in the freezer for a year without sacrificing quality. Thaw them in the refrigerator for 12 hours or longer. Once thawed, use them up within a week.
 
I freeze Egg Beaters all the time..I buy a 4 pack at BJ's and stick 3 in the freezer. You just need to remember to take one out early enough to defrost (I always forget until I run out!)
 
Yes, there is such a thing as powdered egg. It was originally developed for the military and often served in field kitchens. Basically you add water to it and then it cooks up into something like scrambled eggs, but tastes totally bland and pretty nasty in my opinion. Sometimes they add some chopped up Spam and call it an omelet.

Do you think they would be okay in a baking recipe though? Let's say I'm making muffins.. I'm not even sure what the "eggs" do - because you certainly can't "taste" them..:confused3

Can they be purchased in the supermarket?

My daughter's college dining hall makes scrambled eggs with "liquid eggs". They are huge clear bags that they corner off on and pour on the hot grill and scramble. The ingredients list on the box says "Powdered eggs, water".
 
My youngest ds has an egg allergy so we use an egg substitute that comes powdered in a box----baked things bake up just great with it, you'd never know.

Soy flour (buy in health food section or store) can be used as a substitute in baking. 1 tablespoon soy flour + 1 tablespoon water = 1 egg

After 26 years in the AF I can say that powdered eggs definitely exist. And they haven't improved in the past 26 years either! In Basic Training they mixed them up and kept them warm on big steam tables. By the time they were served some of the eggs were the same color of the solid green uniforms we wore back then!
 
I'm very excited about trying these - for baking purposes only.. I tend to go on baking sprees - that last all day, every day - for a week at a time (or more), but I never know when it's going to hit - LOL..

I have a few favorite muffin recipes; a favorite cinnamon bread recipe that my Dson-in-law absolutely loves; as well as a few other baking recipes that my DD and DGD love.. If I use the powdered eggs instead of regular fresh eggs, I'm sure I'll be able to taste a difference (if there is one) immediately..

If I don't care for them, I'll pass them along to DD's FIL for his fishing and hunting trips.. He had them when he was in the military and thought they were great.. So - at least they wouldn't go to waste..

My mom is convinced Shades of Green uses army surplus powdered eggs, which sent my sister in law into an explanation of saltpeter in the powdered eggs in her Navy days...

I just stuck with the waffles! :thumbsup2

was your sister in the navy during world war II?

because thats when it was supposedly used.

since then, nope.

interestingly enough, potassium nitrate (what they call saltpeter) is used in toothpaste for people with sensitive teeth.

no medical evidence exists that it can cause what people says it can cause, or rather, prevent.

the funny taste in the food when you are in the military is them cooking for hundreds, if not thousands of people at a time and not caring how it is seasoned or tastes.;)
