Eggplant ideas needed??

Wow...some good recipes here! I ended up slicing them, dipping in egg, then bread crumbs and baking them. Much better to fry them. I wish I knew how to make the fried eggplant I ate in Greece. It was like a batter coating and they were deep fried. SOOOO YUMMY!!!!
 
Although I love fried eggplant I like to grill it too. If you grill it you can make a light version of both eggplant parm and eggplant rollatine. You can also fry it with no batter on it. Just sprinkle with salt when it comes out.
 
Peel and cut up Eggplant sauted with garlic and onion in a little olive oil. Add 2 cans crushed tomato with some basil & oregano in a sauce pan. Bring to boil and reduce heat to low. Simmer about 1 hour stirring often. Serve over your favorite pasta. So good!
 
Eggplant Bruschetta is the only way I eat it. Sliced up with diced tomatoes, garlic & cheese on top, then baked till everything is melted. SOOO YUMMY!!!
 

I grow eggplant too and think it is wonderful fresh from the garden. I just cut it into cubes, toss with salt and olive oil and cook in a frying pan when I'm too lazy to do anything fancy with it. If you have oregano, basil, thyme, or parsley any and all are great mixed in.

Sometimes I add halved cherry tomatoes to the eggplant while it cooks and mix with penne pasta and parmesan cheese or mozzerella.

Another way is to slice thickly & sprinkle with salt, drizzle with olive oil and roast the slices. Then make a sandwich using the roasted eggplant slices, roasted red pepper slices, a tomato slice and provolone or mozz cheese.
