Oh, I remember those days! My husband used to kid that our youngest's first words were going to be "Big Mac". (It wasn't by the way, her first word was "Mine!"-that should have told us something!) I try to make freezer meals for all of the new moms.


DH and I both ended up having very late lunches yesterday so we decided against dinner. I had made banana bread in the morning so we had that ;)

Our daughter (the Mine! kid) is coming home from school Friday so I'm scrapping the fish in favor of her favorite meal.

It's also game night for us tonight-Mississippi State and LSU-so I'm probably going to fix nibbles instead of dinner. I didn't want want beef two times in a row anyway so it works out :)

Love this! I need to do this at my house. "Mom what are we having for dinner" Not my problem, fend for yourself! A few more years when my kids are a little older and I will actually be able to do this. I can't wait!:yay:

Since DH works 4-midnight, it is just the kids and myself for dinner weeknights so usually once per week I do this. My kids are younger like yours so I prepare their choice. Usually a can of soup for DD8 and chef boyardee for DS6. I usually make myself a sandwich. It's still way easier than a full on meal so it feels like a break.
 

It has been chilly here the past few days so for dinner tonight I made a big pot of vegetable beef soup with homemade corn bread muffins.
 
last week at this time I thought I had an Anniversary party tonight, well its next Saturday! whoops :lmao:

so I whipped up another Homemade Pizza for tonight's dinner :goodvibes
Sunday- Stuffed Peppers
Monday- Roast, Potatoes & Carrots in the Crock pot
Tuesday- Chef Salads
Wednesday- Breakfast for Dinner! Egg's, Sausage & French Toast
Thursday- Salsa Chicken in the Crock Pot
Friday- Left Overs from the week :thumbsup2
Saturday- Now I have an Anniversary Party to go to!
Sunday- Team Meeting with my TS girls so lots of snack & finger food left overs for dinner and the Steeler Game! :cheer2:
 
Tonight I made spinach tortolinni with apple chicken sausage, salad and garlic bread. I am currently waiting for my chocolate cupcakes to cool so I can frost them.
 
My son made dinner the past two nights.

Last night was Moroccan chick-peas and vegetables - very good with a nice spicy sauce.

Tonight he did a quinoa-mushroom dish (kind of like a risotto but with quinoa instead of rice) with oven-baked vegan onion rings on the side (delicious!), and a green salad.

I had a pot-luck party today at lunch time so made a large batch of chili, and there is enough left over to make dinner for the three of us tomorrow. I might make some cornbread to go with it (I do a veganized version of the Disney Trail's End buffet cornbread).

So I have looked in the freezer and have a menu made up for the week. Now just a medium size grocery shop tomorrow and we're all set.

Sunday: Dinner with inlaws. I just need to bring a salad

Monday: Tofu parm, salad

Tuesday: Chicken Burgers, Fries, cut up veggies and dip (Veggie Burger for dd)

Wednesday: Rosemary Chicken and potatoe wedges, broccoli (fish for dd)

Thursday: Breakfast for dinner. Pancakes, Scrambled Eggs and fruit smoothies.

Friday: Wraps. (ground beef, cheese, lettuce, cut up veggies, sour cream) (Refried bean instead of the beef for dd)

Saturday: Spaghetti Pie, Salad

Sunday: Potatoe Soup, Crescent Rolls, Salad.

I also plan to make a beef stew during the week to put in the freezer in individual containers for a quick dinner or for lunches.
 
This morning I made us chocolate chip waffles with sausage and fruit for breakfast.

For dinner we are having ham and scallopped potatoes with homemade applesauce and salad. Chocolate cupcakes for dessert again.

Sunday: Homemade clam chowder, hot dogs, tossed salad
Monday; Wicked Chicken Casserole
Tuesday: Mexican Shepard's Pie
Wednesday: Shrimp, broccolli and mushroom alfredo over penne pasta
Thurday: Oven fried pork chops, stuffing and green beans
Friday: Spaghetti & Meatballs
Saturday: Steak on the grill, fettuccine alfredo and vegetable stir fry
 
I had a Living Social 50% off coupon for Whole Foods. So DH and I got a pre-seasoned herbed cornish hen stuffed with stuffing, and a couple caesar salads. (Plus a pie for desert.) Yummy! This was a splurged, but it was sooo nice to have a "gourmet" meal with no prep work. :cloud9: (Especially since we don't eat out at restaurants anymore.)


Tonight is frozen pizza, and I need to figure out my meal plans for the rest of the week......Someone had posted an apple and pork recipe using those McCormick's kits that come with all the seasonings. I noticed those were on sale for $1 each so I picked some up. We've had the chicken lime fajitas, but never the pork with apples.....so I can't wait to try that one! :thumbsup2

My husband and I like to cook together so for dinner last night and tonight we made a chicken on the rotisserie, scalloped potatoes, sweet corn, mushrooms and onions sauteed in garlic and white wine, and dessert is a salted caramel apple pie that I made.
 
Here's my weekly menus:

(I start on Saturday, grocery shopping day)

Saturday:
grilled steaks seasoned with Trader Joe's everyday seasoning
microwaved 'baked' potatoes topped with sour cream, butter, chives, shredded cheese
sauteed asparagus with olive oil and balsamic vinegar
pretzel bread (made by my local grocery...almost as good as Le Cellier!)
Sunday:
stew meat in the crockpot with mushrooms and onions
white rice
sliced tomatoes
leftover asparagus
Monday: chicken, baked, cut into strips, seasoned with Mexican spices
mixed with leftover rice and salsa, warmed on the stove
topped with shredded cheese
black beans
Tuesday:
Boiled Peel and Eat Shrimp
Roasted Red Potatoes with olive oil and rosemary from my kitchen plant
Corn on the Cob (very likely the last of the season :sad1:)
Wednesday:
Turkey Burgers on the Grill
Lettuce, Tomato, Pickles
Baked Beans (from a can)
Thursday:
Mom's Night Out!! Dad and kids eat leftovers
Friday:
Take Out Night
 
Monday: Crockpot Chili

Tuesday: Gluten Free spinach and canadian bacon pizza

Wednesday: baked potato with leftover chili

Thurday: crockpot lemon chicken

Friday: leftovers of the chicken?

Saturday: breakfast for dinner

Sunday: probably family dinner

Tuesday: Sweet Potato, Black Beans, and Mango in Tortillas

Friday: Fake Chicken Pattie on roll, zucchini in tomato/cinnamon sauce

Baked French toast casserole with sausage patties and fruit

Baked Spaghetti with meat sauce, salad, and garlic bread

Friday:
Sloppy Joes with baked french fries and fruit

Saturday:
Sirloin steaks with corn bread pudding and sauteed veggies

Well, not quite vegan. In one case, I'm going to use meat as a condiment for the meal. I might end up leaving it out, though. We'll see how it goes--wish me luck.
 
Reading all your menus makes me hungry. Everything sounds delicious. And we are on a tight budget with trying to buy a house and so it's going to be some recycles at our place this week and the next too. Here's what I've got planned.

SUN- DH took me out for dinner at Texas Roadhouse but we both ordered inexpensive entrees and took home the leftovers and skipped cocktails and had tea instead.

MON - Mexican meatballs and rice, mexican street vendor style corn salad

TUE - Brown beans seasoned with salt pork, cornbread, jello

WED - Brown bean chowder over pasta, toasted cinnamon roll ups, jello

THU - Cumin meatballs, spiced peas and rice, tossed green salad

FRI - Chicken and green beans over mashed potatoes, tossed green salad

SAT - Stewed Chicken and rice, tossed salad, jello
