I haven't been here in awhile. Trying to get back in the swing of things. I made a homemade beef-a-roni with whole wheat elbow macaroni Tuesday night. We enjoyed it! I just sauteed some green pepper and onion in some light margarine. Set it aside. Cooked and drained ground beef (I used Angus). Added the green pepper, onion, and some Italian seasoning and a large can of tomato sauce and let it simmer. (I would have sauteed some minced garlic with the beef, but I was out) After awhile it seemed a little on the dry side so I added some Prego 7 Herb sauce. Even though it was good we still had lots left over, so I'm going to put it in a baking dish, add a little more sauce and top with shredded cheddar cheese and make it like a spaghetti bake probably tomorrow night. We had some garlic bread with it and banana bread for dessert.

Tonight- Parmesan coated Chicken (already prepared), with FF, green beans and potatoes.

Thurs. night- Beef-a-roni bake

Friday night- Usually pizza. I found a great whole wheat dough that's a great price .88! So we'll probably make pizzas.

Sat. night T-bone steak (it was on a great sale), baked potatoes or corn on the cob, and baked beans.

Sun. night- Apple & sage pork chops. I have the McCormick pre-measured spices and recipe card. It's really good. I've made it before. We'll have mashed potates and maybe lima beans.

I might switch those things around a bit. It's been a crazy week.
 
I need to get back into this. This summer has been so hot I've not wanted to cook at all. Now that it's cooled off, I'm really ready to try again.

Tonight we had meatloaf, peas and rolls.

Tomorrow night is leftover night since Friday is grocery day:

potato and broccoli cheese soup
hamburger helper (I know it's gross, but my husband loves it.)
spagetti and sauce
meatloaf and peas
 
Tonight is fend for yourself/clean out the fridge night.

Love this! I need to do this at my house. "Mom what are we having for dinner" Not my problem, fend for yourself! A few more years when my kids are a little older and I will actually be able to do this. I can't wait!:yay:

We do this at our house too. We call it DYOT - " Do your own thing". The kids usually end up eating corn dogs or chefboyardee ravoli or something like that instead of leftovers, but that's ok - I didn't have to make it!
 
Tonight (as long as the weather cooperates) is steaks, baked potatoes, and creamed spinach.

Saturday/Monday: Buffalo chicken dip sandwiches, Heidi's potatoes, carrots
Sunday/Tuesday: pork roast, mac&cheese, peas
Wednesday/Thursday: creamy Italian chicken pasta, salad, garlic rolls
Friday: homemade pizza
 
Tonight we are having Grilled Flank Steak w/chimichurri sauce, Puerto Rican Rice and Beans, and fried plantains :)
 
Tonight we had chicken pot pie for dinner. I had made the filling a few weeks ago with some leftover roasted chicken and some frozen veggies (the bags that only have a little bit left in them). I topped it with some crescent rolls and it was yummy.

That sounds REALLY good... and somewhat easy to make!

We did a fend for yourself night. We spent the morning at a HUGE neighborhood garage sale. Sadly, we didn't buy anything even though there was a TON of stuff out... just nothing we needed. Afterwards, we went out to lunch. So no one really felt like making dinner as we were exhausted.
 
We were on vacation this past week and we had a "staycation". DH and I ended up eating late lunches and ate an evening snack so we moved our menu items from this past week into the rotation for these next couple of weeks.

Saturday: Nephews are with us overnight - hot/chili dogs and mac & cheese

Sunday: Homemade pizza and salad

Monday (dance night/JV football): Sloppy joes and shells & cheese

Tuesday: My birthday - going out for Hibachi (with a Groupon!)

Wednesday: Taco Salad

Thursday: Turkey Meatballs, buttered noodles, corn on the cob

Friday: Free for all

Saturday: Chili, cornbread

Sunday: Pizza sandwiches, salad, applesauce

Monday: Scrambled eggs, sausage, toast

Tuesday: Chicken enchiladas, refried beans, applesauce

Wednesday: Kielbasa, pierogies, pears

Thursday: Pineapple grilled pork chops, fettucine noodles, green beans

Friday: Free for all

Saturday: Pulled pork, french fries, peaches

Have a great couple of weeks! :)
 
We have instilled this rule in our house!! We found we were going out so much that we were earning a free sandwich from Subway every week - YIKES!

So we've turned off all spending - period!!
 
I have two recipes to share that I got from a friend last week and tried out on my family. Both were very simple & big hits!!

Crock pot potato soup

bag of frozen hash browns
2 cans of cream of chicken soup
2 cans of chicken broth
1 pack of cream cheese (I used 1/3 less fat)

Take butter and coat your crock pot with it. Add hash browns & all four cans of soup & broth into crock pot. cook on low for 4 hours. After three hours add in cream cheese. Serve with bacon & cheese.


Pizza casserole

1 box of penne noodles
2 jars of spaghetti sauce
pack of hamburger meat
2 cups of mozzarella cheese
pack of pepperoni

boil noodles & drain & rinse. cook hamburger meat. In a large dish add noodles, hamburger meat & spaghetti sauce & mix well. Top with cheese and then place pepperonis on top. Bake on 350 for 20 minutes.

We enjoyed them both!! I hope you will give them a try. :)

Monday - Wicked Chicken Casserole
Tuesday - Steak on the grill, creamy garlic pasta, peas
Wednesday - Spaghetti & Meatballs, garlic bread, salad
Thursday - Meatball subs, chips, salad
Friday - baked chicken, stuffing, gravy, biscuits and mixed vegetables
 
Tuesday - we had the drip beef from Pioneer Woman's website, roasted beets on greens

Wednesday - we had left over pork chops, egg noodles and salad

Thursday - we had hot dogs and sauerkraut

Friday - we had shrimp scampi over angel hair pasta

Saturday - we went to the Bronx Zoo to celebrate my sister's birthday, ate at Five Guys on the way home and had Dairy Queen ice cream cake when we got home

Today - we are having Citrus marinated chicken breast with sundried tomato risotto (my first time trying to make risotto)

meals for the next week to week and a half:

-Spaghetti with meatballs and sauce (bought fresh tomatoes, going to make a big pot of homemade sauce)
-Chicken pot pie
-Slow cooker cranberry pork roast, mashed potatoes, broccoli
-Homemade pizza
-Homemade beef barley soup with homemade bread
-Ham, cheesy potatoes, green beans
 
Only posting 1/2 the week. Need to go shopping on Thursday.

Sunday - Steaks, broccoli, brown rice, salad
Monday - Roasted Chicken burritos with homemade salsa
Tuesday - Quesadillas with leftover chicken
Wednesday - Ground turkey, white bean and green chili soup.
 
We used leftover steak for a steak salad for lunch. The salad had lettuce, tomatoes, avocado, and walnuts with strips of the T-bone on top. I had Greek salad dressing over it. Delicious!

For dinner we're having the apple and sage pork chops. I already cooked it. All I need to do is heat it in the oven tonight. The flavors should go through the chops very well by then.

Don't know about next week yet. I'll get my list together later tonight.

Tuesday- Homemade Pizza
Wednesday- Broccoli Cheese Soup
Thursday- Chicken Wraps & Fruit
Friday- Gourmet Grilled Cheese & Tomato Soup (these sandwiches are sooo good!)
Saturday- Attending a 50th Wedding Anniversary Party
Sunday- ???
