Super Cheap Week continues in our home...tonight:

Canned Chicken Noodle Soup
Grilled Cheese Sandwiches

Next week I am getting a whole chicken and plan to make three meals from it. DH bought a car and put a down payment on it that set us spinning financially. While it is good in the longrun to save on paying out so much interest, we are struggling right now. It is taking a while to catch back up from it.
 
Trying to eat from the pantry but it's causing me to be a bit creative since I tend to always be missing one important aspect of a meal. Last night we decided on fajitas. I fried up and onion and a pepper I had in the fridge and cooked up some boneless skinless chicken breast I had defrosted from the freezer. But I only had 1/2 an 8 oz package of shreaded cheese left and 2 flour tortillas. I ended up serving the chicken and peppers and onions over tortilla chips and topping it with some jarred queso. It was pretty good! Tonight is a potluck at a friends house for me but I still need to feed hubby and the kids, I think they're getting hot dogs!
 

Tonight we are using the leftover roast beef to have roast beef caesar salads with garlic bread.
 
I use ground ckn, or turkey with Hoisin sauce, some pineapple juice and chopped onions and water chestnuts. Serve with Mandarin oranges, pineapple tidbits, onion and small chowmein noodles. Can be over a rice bowl, too. 3 of my 4 kids love it.
 
Last night was beef, mashed potatos and peas with a tomato stack substituting for the beef for us non meat eaters. Obviously doesn't go together but not bad.
Today: Cheese ravioli with pesto, mixed veggies and bread with some cake pops I picked up at the bakery today for dessert.
Tomorrow: Taco night
Sunday: Biscuits and gravy, scrambled eggs and oven fried potatos
Monday: Vegitarian taco soup and tortilla chips
After that I'll need grocerys again.
 
Tonight we had a home made pizza with some Mac and cheese and so cucumber slices. Now we are waiting on the brownies to cool off to eat. Tomorrow I think I shall make a turkey meatloaf I had two things of turkey frozen and if we loose power on sunday want to loose as little as possible, good luck to anyone in the storms path.:hug:
 
Tonight is baked steak with mushrooms, onions & gravy (via the crockpot), mashed potatoes, peas & carrots, and rolls.

Planning the menu for next week looking like:

Saturday ????
Sunday: Indian Meal for our Jungle Book Movie Night (chicken curry, thai pai noodles, rice, naan bread)...
Monday: Pulled Pork Sandwiches, Chips, and potato salad
Tuesday: Tacos
Wednesday: Clam Spaghetti & French Bread
Thursday: Chili Dogs
Friday: Eat out...sorry on the road for a long weekend at the cabin
Saturday: Fresh Fried Fish, potatoes & onions, fried okra & squash, cole slaw and apple with homemade ice cream
Sunaday: Hamburgers & chips
 
My menu for the week:
Saturday - Chicken with italian pasta/ broccoli
Sunday- Pot roast with carrots and potatoes
Monday - Eggs, hashbrown, grits and sliced tomatoes/cucumbers
Tuesday - Tuna casserole and peas
Wednesday - Beef and northern bean soup
Thursday - Stuffed shells and salad
Friday - Pizza and salad
 
We ended up going out for a big lunch with my grandma today so dinner tonight was snack type items.
 
Tonight I get dinner cooked for me! My brother is slow grilling ribs all day for me for my birthday...:goodvibes its nice to be cooked for once in a while ;)

So the rest of the week looks like this...
SUNDAY- Cabbage & Noodles
MONDAY- Hot dogs & Fries
TUESDAY- Wings & Salad
WEDNESDAY - Chicken Salad Croissants & fruit
THURSDAY - Jambalaya
FRIDAY - Grilled Cheese & Tomato Soup
SATURDAY - Picnic...one of the last of summer :sad2:

Tonight is Smoked Sausage, Fried Potatoes, and Kraut...

I have been working on my meal list for next week all day. Monday is the start of the new semester so I was really struggling. I think I have it figured out though.

Monday: Open night... most likely something from the freezer section.
Wednesday: Pork Schnitzel, German Potato Salad, Sauteed Cabbage
Thursday: BLT, German Potato Salad, Chips
Friday: Steak, Baked Potatoes, Creamed Spinach
Saturday: Chicken Quesadilla, Chips, Guacamole
 
Last night- Homemade grilled pizzas with red peppers, green peppers, onions, zucchini, spinach, and fresh mozzarella.

Tonight- grilled baby back ribs with homemade bbq sauce and corn on the cob from farmer's market. Dessert: Peach and blueberry cobbler on grill made with peaches from farmer's market.

Sunday- ?

Monday- BLT's using uncured bacon and fresh tomato from farmer's market
 
Tonight we had an appetzer dinner. We have a stack of movies from the library and are enjoying a movie night. I made home made mozzarella sticks and zucchini sticks. We also had pizza rolls and the last of the salad.
 
This is a popular camping recipe. But the stack is potatoes, onion rings, burger, onion rings, potato. Wrap in heavy aluminum foil, and throw it on the camfire, turn it in 10 minutes. Eat it right out of the foil.

We used to make that on scout camping trips, and called it "hamburger a la foil." Some of the best stuff I ever ate.
 
Tonight we are having pork chops, buttered noodles, applesauce, and ratatouille (from the big batch we froze earlier this month)
