I am home tonight which was not originally planned but the boyfriend is sick. So dinner tonight will be some PF Changs Chicken, Rice, and Egg Rolls. Glad I bought some of the frozen stuff the other day!

Oh, and lunch today will be chicken hash with eggs and fruit. I have a left over potato that we didn't use, left over grilled chicken from last night, half a bell pepper, and some onions. Should be tasty!

We've been having computer and internet problems (Can you say BUDGET BUSTER? I had to drop my September trip to pay for the new laptop!) so this is my fourth attempt to post my menu for the week. I'm feeding three extra this week-down from a high of 11. One of my brother's old high school friends is a carpenter and construction jobs are scarce right now so he's working on our renovation project while I'm babysit his two girls (8 and 10). The girls are fairly picky so the menu is going to be pretty basic.

Homemade macaroni and cheese

Grilled cheese/caramelized onion sammies
Fresh strawberries in balsamic

Chicken piccata
Pasta
Caesar salad
Garlic bread

Friday
Build yer own taco bar
Black beans
Mexican rice

Yesterday, my son (who is getting interested in eating more raw foods) made raw spring rolls (using collard green leaves as the "wrap" with thin strips of various raw veggies inside) with a spicy peanut sauce. They were excellent! He served them with a cooked side of bok choy, mushrooms and baby spinach sauteed in a slightly spicy sauce. Then he made an apple and pear crisp for dessert.

Tonight I'm doing a clean-out-the-fridge bean chili plus a green salad, with vegan chocolate-chip peanut butter cookies for dessert.

I'm thinking of broccoli-garlic pasta for tomorrow.

We went to Disney in March of this year and I miss it sooo much. I am sad to say we can only make it once every 4 or 5 years. It is the most expensive vacation we take, so we just can't do it as often as we would like. How about you? How often do you get to go to Disney?

Last trip was late 2008 , we went twice that year. We haven't been back because we wanted to visit other places .. yes I know. CRAZY ; ) :scared1:
With Lego land opening my DS8 is dying to get back to Orlando , he is also now tall enough and brave enough for the big rides at Universal. We are thinking of flying down in the spring to Orlando, can't decide if we will do Disney , but if we don't we will still eat at a resort, soak up some Disney magic and shop at DTD for sure. Maybe eat dinner at Fort Wilderness Campground and watch the electric parade from the beach.. if it is still going on . IDK.. I know there is a new resort opening .. Disney Animation I think.. I have no idea , so much to think about. I really want to hit Jekyell Island in Georgia next year too, so I can't get outrageous on the Orlando trip, plus I am going to NYC for a girl's trip in Dec. I need lots of spending money for that trip too ; ).

Last time we went was 2007. We were supposed to go last year, but I started an MBA program and the work was too much that semester. So, we pushed it back to this year.

Tonight is the Italian Style Meatloaf, Green Beans, Mashed Potatoes, and Bread.

I didn't know that! Where's it going to be a part of DTD? I have to look into this!

Our last trip was in 2009 and our trip before that was in 1991 (I was 6). It is not feasible financially to go too often.

Tonight we are having the pioneer woman's sour cream noodle bake with salad.
 
tonight we are shepherds pie and salad. tomorrow is goulash and salad friday my nephew is coming over and we are making pizza bagels with vegetable toppings (mushrooms, green and red pepper, onion) and salad (trying to use up the salad). saturday we will have boneless pork chops, rice,, and a veg from the freezer. sunday we are having baked pasta and probably salad :).
 
I feel absolutly horrible. The temps here are in the high 90's and I have been working in a unairconditioned school. Last night I used the indoor grill to make blue cheese stuffed chicken breasts. This afternoon I had turkey bacon, tomato, and mayo sandwiches. Tomorrow is shopping day.
 
New to this thread but hoping to eat at home more so this is great. We were lucky enough to be taken out to dinner 3x last week so our dining plan was a little out of whack but trying to get back into normal mode.

New to this thread as well, but some nights I need motivation not to order a pizza Especially when it's 99* and the last thing I want to do is cook.

Tonight we had:

Tilapia with a bit of butter, fresh basil and fresh minced garlic wrapped up in foil and BBQd
Broccoli cheese au gratin rice
Broccoli
Watermelon
