I had a very productive stay-cation. Over four days, DH and I prepared over 30 meals that are now in the freezer. Most are just thaw and re-heat on the stove, and some are ready to grill/bake dishes. All we'll have to do is add the sides.

DH is a teacher, and I'm an accountant with fiscal year ending Aug 31. Sept and Oct are crazy months in our household, and we end up grabbing fast food WAY too often. I decided to make an effort to stop this bad habit.

I'm planning on another long weekend of cooking around the first of August, and hopefully we'll be set through October.

Tonight we had ground beef burritos using only 2/3 of a pound of beef.

1 stalk green onion chopped, 2 cloves garlic chopped, 3/4 cup chopped tomato, 1 can corn, 3/4 cup black beans (optional), 1 cup shredded cheddar or Mexican cheese blend, 2 cups cooked white or brown rice,
1 jar salsa, 3/4 cup enchilada sauce (optional) 5 tortillas

1. Preheat oven to 350*F. Brown ground beef in large nonstick skillet over medium-heat, stirring to separate meat. Drain and discard fat. Add green onions and garlic; cook and stir 2 minutes.
2. Combine meat mixture in pan with cheese, tomato, corn, beans, rice and salsa; mix well. Spoon mixture down center of tortillas. Roll up; place in a baking dish that has been coated with some olive oil to prevent sticking.
Pour enchilada sauce over tortillas.

Bake 15 minutes. Makes 5 servings.

We have been eating versions of pasta salad lately. I made a cold version with Italian dressing, turkey pepperoni, cheese crumbles, diced zucchini, and chopped tomatoes. I made it baked too with a spaghetti type sauce including beef and veggies.
 
On Paula Deans Site these are called Shrimp & Oyster Po Boys but we dont do the Oyster part just shrimp!

Ingredients Add to grocery list
sliced tomato
shredded lettuce
Tartar Sauce (see recipe below)
Vegetable oil for frying
7 medium shrimp, peeled
5 medium oysters, shucked
1/2 cup Paula Deen Hot Sauce
3 eggs
2 tablespoon Paula Deen House Seasoning
1 cup flour
1 hogie roll, split, buttered and lightly toasted
salt and pepper, to taste
garlic powder, to taste
Tarter Sauce:
1/2 cup chopped green onion
1/2 cup chopped dill pickle
1 cup mayonnaise
1/2 teaspoon Paula Deen House Seasoning
Directions
Heat oil to 375 degrees in a dutch oven deep enough to completely cover shrimp and oysters. Place 1 cup of flour in a bowl and add House seasoning. In another bowl, beat 3 eggs and add hot sauce. Dredge shrimp in egg mixture and flour mixture and drop into hot oil one at a time. Fry until light brown (do not over cook). Lightly flour oysters and drop one at a time into hot oil. Fry until golden brown. To assemble sandwich, spread both insides of bread with tartar sauce. On the bottom piece, place shredded lettuce and sliced tomato. Add salt, pepper and garlic powder to taste. Place oysters on top of tomato. Place another layer of shredded lettuce and then place shrimp on top. Top that with bread and toothpick to hold sandwich together.
Tarter Sauce:
In a bowl, combine chopped onion, pickle, mayonnaise, and House Seasoning and mix well.

Of course this recipe is for just one, so you have to adjust but I never measure anyway :rotfl: I buy a bag of med shrimp at wal-mart for like $5 bucks and they work well, and i got an easy 5 to 6 sandwiches out of it. you can also use already breaded frozen shrimp we just like them better this way~
 

ok, the family is geing really tired of the grilled leftovers from Mondays cook out. We had BBQ chicken salad sandwiches for lunch today and tonight we are having the last of the hotdogs with beans and a salad.

I noticed someone mentioned sushi. I have to share, a few weeks ago my 9 year old took the cooking class at downtown Disney and made chicken tender sushi. sounds weird, but the kids loved it. just sub a fried chicken tender cut in half long ways for the fish. it also had cream cheese in it. quite yummy, this will be an option for my girls who don't like regular sushi.... just a thought.
 
Tonight we are having the pasta dish we were going to have last night, fusilli alla caprese with chicken.

2 Twice Baked Potatoes (6 potato halves per meal)
2 Balsamic Marinated Chicken Thighs (not cooked, ready to bake)
2 Chicken Enchiladas
2 Pork Lo Mein
2 Beef Goulash
2 Skillet Stroganoff
2 Shepard's Pie
2 Meatloaf (not cooked, ready to bake)
2 Marinated Pork Chops (not cooked, ready to grill)
2 Marinated Fajita Steak (not cooked, ready to grill)
2 Spagetti Sauce
2 Chicken Pot Pie (just the filling)
2 Chicken Lo Mein (veggies added during reheat)
2 French Steak
2 English Pasties (8 pasties per meal)

AND 4 Apple Pies ready to pop in the oven.

Many of the recipes came from a book called Don't Panic - Dinner's in the Freezer. It was recommended by the blogger that gave me the idea. Also, we'll need to add/cook veggies for serving night, but most of the work is done.

Just yesterday, I was able to get boneless chicken breasts for $1.87/lbs, so hopefully this weekend, I'll be adding the the list.

I'm so impressed with anyone who can plan 30 days out! I'm not doing so well with day-to-day right now.

Wednesday didn't work out as planned. My poor little niece broke her big toe and I spend the evening in the emergency room with my brother and his family.:sad2: I think those that were here at home got take-out.

Yesterday I made a big old Southern summer veggie lunch:

Black-eyed peas/rice
Yellow crook-necked squash and tomatoes
Corn on the cob
Cornbread

We were planning on being in New Orleans last night but due to the broken toe we stayed home and ordered pizza.

Tonight will be:
Spaghetti and meatballs
Caesar salad
Garlic bread

We'll probably cook-out again on Saturday. The house got sooooo hot yesterday when I made lunch. Besides, hubby does the grilling:thumbsup2

Sat- Annie's Eats meatball sliders (without pesto) and salad
Sun- grilled pork chops and peaches w/ arugula
Mon- homemade pizza*
Tues- grilled chicken, salad, Pioneer Woman's crash hot potatoes*
Wed- chicken pot pie*
Thurs- salmon, sauteed zucchini and white rice*
Fri- OUT (BFF and I are havin girl's night, DH will eat a lasagna* I froze for him last week)
Sat- ham steak, lima beans* and augratin potatoes*
Sunday- turkey parmesan* and spinach with garlic bread*

*denotes something I have most components on hand before shopping

I may sub one of the meals with a chicken salad. I already have celery and chicken... I would just need grapes and an apple... Hmmm...
 
Tonight we are having cheesy ham and hash brown casserole with brussel sprouts. When I made it the last time I froze a small one in the freezer so all I have to do is bake it up.

Tonight did not go as planned. Our air conditioner has been acting up and I spent the day with my Uncle trying to clean it all out and see what was wrong. So as a thank you to him we ordered pizza using a gift card we had. We will have the cheesy ham and hash brown casserole tomorrow night.
 
Here's our plan for the next few days:

Saturday - Roasted or fried chicken, 2 sides, and rolls ($9.99 deal at Publix this week, and it includes a gallon of tea. My parents are still out of town, so we're skipping eating out this weekend.)
Sunday - Leftovers
Monday - Chicken parmesan with pasta and salad
Tuesday - Sausage, eggs, home fries, and toast/biscuits
Wednesday - Hot dogs, chips, and baked beans
Thursday - Chicken and dressing and steamed vegetables
Friday - Take out

Just realized my list is a little heavy on chicken. (Kroger had an awesome deal on chicken last week, so the freezer is stocked with it.) I need to put more variety in the next one.

Next weekend we are going to our summer house for the weekend so I am trying to eat as much out of the pantry this week as I can. The plan so far is

Monday- Chicken Stir fry with rice
Tuesday- Grilled Cheese and tomato soup
Wednesday- Chicken Paprikash
Thursday- Cappelini al forno
