Everything sounds so yummy! I am getting hungry and I just finished lunch (left over steak and rice from dinner last night)

I have chicken in my slow roaster now (while I am at work) and when I get home and I making a chicken pot pie. Perfect for this gloomy, rainy Michigan Wednesday!
 
Here are our menus for this week:

Mon. BBQ beef bake -- brown 1lb of meat (I used ground chicken) and add about 1cup bbq sauce - more or less to taste. Pour into casserole dish. Top with shredded cheese. In a bowl. combine 2 cups Bisquick, 2 eggs and 1 cup milk. Pour evenly over cheese. Bake 400 for 25 min. Let cool about 10 min then enjoy! We had ours with corn and green beans on the side, brownies for dessert.

Tues. Daughter had a great day at school so we ordered pizza to celebrat (and I was tired and didn't feel like cooking.)

Wed. Roast beef au jus on crusty bread, mashed potatoes, carrots, bananas

Thurs: Chicken strogonoff, peas, fruit

Fri: Chicken Fiesta -- stuffing mixed with diced chicken, green chiles, tomatoes and onions. Top with cheddar cheese and bake

Sat: Hot dogs, pasta salad, corn on the cob, deviled eggs, chips and dip, something for dessert

Sun: grilled pork steak, baked potatoes, grilled zucchini, dessert

Mon: leftovers from the last two days

Tues: Grilled chicken breast, vidalia onion casserole, green beans

Wed: Baked sphaggetti with mozzerella, broccoli, garlic bread

Thurs: Grilled pork tenderloin and some other stuff undecided

Fri: Chicken and white bean chili in the crockpot

That's what I have on hand right now. I got out my Taste of Home cookbook and recipe cards and planned some family favorites to kick off summer.
 
Tonight will be hamburger steak smothered in onions, pink-eye field peas and rice.

mmmm, that sounds like a southerner's dream right there!!!

OT: Anyone else on here battling the red-eyed beasts (cicadas) right now? :scared1: They are from the devil I tell you, so annoying. They are swarming here. Today I had one on my neck, one in my hair and one down the back of my shirt after I came in from checking the mail! EEEEWWWWW!!!! :mad:

That BBQ beef bake sound yummy. I am going to have to try that soon.

Tonight we are having leftovers. We have a ton to use up before they go bad.

Tomorrow we are taking my Grandma out grocery shopping for her annual Memorial Day Picnic on Monday so we will most likely go out to dinner with her.
 

I'm working hard to make meals off of stuff already in the pantry/frig. I came up with something tonight that turned out fabulous and sort of took the edge off our Chinese food craving (of course we crave our high-end Chinese restaurant; take out for 4 is no less than $40 plus gas)
for 4:
-1 lb (ish) beef (lol various forms, a single steak, leftover rb)browned in oil with some jarred minced garlic and 1 Large Vidalia onion in strips
-one can mushroom pieces and stems
-1 jar of beef gravy found in back of cabinet
-2-3 tbsp. soy sauce
-couple shakes hot sauce (I used Frank's)
-one package frozen stir fry vegs. added to pan with 1/2 jar water, salt and pepper.
-3 cu. cooked white rice

simmered for about 30 min. Serve over rice.

It was amazing. I made it around 3 pm so my husband could eat before he went to school. My daughter and I ate with him. Packed up left overs to bring to work tomorrow night. Later on around 8:30 pm my daughter wanted something to eat. We ended up finishing it. I'm still craving more!! I bought the flank steak-wasn't on sale, paid about $10 for 1.5 lbs. So worth it, and you figure, ends up being about $3 per serving anyway, still much cheaper than eating out. It was really easy too.
 
Sorry I have been really behind on this thread. I have been struggling with meal planning lately. We are still eating at home the vast majority of time, but I just have been dreading cooking lately... which makes me sad as I normally LOVE it.

Today ended up being grocery day this week because we were out of town on Wednesday.

Wednesday: Ate out at Chop House for lunch while at the Tanger Outlets in Sevierville with mom. Ate my left overs for dinner (we bring the cooler to keep our left overs good for later!).

Tonight: Grilled Smoked Sausage, Stir Fried Cabbage and Onions, Fried Potatoes

Saturday: Garlic Grilled Rib Eyes, Potato/Carrot/Onion Packets, Rolls

Monday: Hamburgers, Corn on the Cob, Potato Salad
 
First week of meal planning!

Tuesday-Baked Potato Pizza
Wed-Pork Roast
Thursday-Chicken Alfredo Lasagna
Friday-Baked Ziti
Sat-Sour cream pork chops
Sun-leftovers

Haven't planned any sides yet. Suggestions?
 
For summer sides, tune into your market's veggie sale. Whatever is on sale:goodvibes is what I prepare: grilled asparagus, oven roasted sweet potato chips, grilled green peppers and onion mix; many times we'll have a fruit dish instead of a veggie in the summer. Right now the melons and strawberries are on sale in my area....all delicious and so good for you. :thumbsup2

You too dear and Happy Memorial Day everyone! I am going to grill out steak and make some delicious creamed corn. I will post the recipe later. Once you try it you will crave it!

I hope that everyone has a safe and happy holiday weekend. We are working out in the yard and going to a few get togethers, one tomorrow around lunchtime and one for dinner on monday. Tonight we are having the pioneer woman's beef with snow peas posted earlier and tomorrow we are doing pork chops with roasted potatoes and brussel sprouts.

Tuesday-Tuna sandwiches, cantelope, carrot and celery sticks
Wednesday-Chicken tettrazini, green beans, tomato slices, watermelon
Thursday-Barbecue pork sandwiches, broccoli slaw, cantelope
Friday-salmon ceasar salads, rolls
 
Oh I need some group therapy here. I have 2 eat out nights (not cheap); one for a 21st BD party that was Friday night, and the other for a friend moving away. Both are very dear to me so I have no choice. I will actually have to dip into the Disney stash for this. Anyway, here's the menu:
Saturday-cook out at inlaws
Sunday and Monday-staying with Mom (battling cancer; giving my Dad a break so he can go game fishing; maybe some fresh tuna at their place Sun. night;))
Tuesday-night out for friend moving
Wednesday-pulled beef sandwiches, baked beans, cucumbers
Thursday-Spaghetti and salad
Friday-Turkey ala king, sliced tomatoes.
 
Okay the beef with snow peas was AMAZING. That is going to be on our menu again for sure.

We changed things up a bit tonight and decided on ham steak with roasted potatoes and corn.
 
We had "cold" fried chicken, coleslaw, sour cream potato chips, and mint chocolate chip ice cream for dinner tonight. It was good! :)

We eat gluten free:) DD can't eat wheat, so we all just do it with her!
