How do you make southern style green beans? I'm from NJ, but we recently visited my in laws in South Carolina, and we ate at a Ryan's buffet and the Cracker Barrell and both had these green beans that I could have eaten as a meal they were so good, like maybe they were cooked in ham juice or something??
 
Ate out Saturday after husbands graduation, and ate at Subway for lunch after church on Sunday. Kids would not stop begging for it so we "got it over with" AND husband and I ate lunch buffet at Pizza Hut today. :confused3 I really want to start trying to be good about eating out. We've been terrible lately!!

Dinners for the next 5 or so days in no particular order:

:wizard:Meatloaf, left over cheesy potatoes, California blend veggies
:wizard:Pork chops with apricot glaze, coleslaw, corn bread
:wizard:Turkey tenderloin, mashed potatoes, stove top stuffing, veggie
:wizard:tacos with lettuce/tomato/sour cream
:wizard:Fried chicken, corn, green beans
:wizard:Slow cooker chicken and dumplings

Gobbler Sandwiches: Deli turkey, sliced Muenster(we have never tried this kind of cheese), poppyseed salad dressing and apple slices...all on toasted bread. I think I will also broil the meat and cheese on the toast before adding the dressing and apples. It does sound interesting. I will give the family verdict tomorrow.

Raw Veggies and Dip
Chips



DH actually tried something similar at a local restaurant last week.

It had mayo instead of the poppyseed dressing. The rest was turkey, cheese, and bacon on rye bread.

The cheese was melted on the turkey and bacon first, then placed on the bread which was not toasted.

DH and DD (who had to try it) thought it was very good.
 
The Gobbler Sandwiches were....okay at best. They really didn't have as much flavor as I had hoped. :confused3 The family enjoyed them, though.

Grilled Italian marinated Chicken Breasts
Baked Potatoes
Grilled Veggie Packets
*Homemade Milkshakes for dessert

How do you make southern style green beans? I make mine cooked in bacon fat. (That's how DH's entire family makes them too) I use 1 slice of bacon for every can of green beans. Fry up the bacon to desired doneness (in a pot with an available lid). Drain the green beans, pour into the pot. Turn heat to low. Stir often. I cook mine for a minimum of an hour (at a slightly higher temp) or up to four hours. There is probably zero nutrition left in them by the end but they sure are tasty!

What kind of deli turkey did you use? My favorite one is Butterball Thanksgiving roasted. I LOVE it. I don't normally buy freshly sliced deli meats but when it's for a big, family-sized meal, I feel like it's OK to splurge on something that's really delicious.
 
Monday we had Singapore Noodles with a smidge of chicken tossed in.

Tuesday we ordered pizza from Papa John's.

Wednesday we had Paleo Tilapia Tacos.

Thursday: Hamburgers, baked beans and oven fries.

Friday: Chicken Tortilla Soup

Saturday: Swedish Meatballs over noodles with broccoli

Sunday: meatloaf, green bean casserole and yeast rolls.

ETA- My grocery bill this week was only $87 because I had a lot in my stash already. Sunday, I needed the fresh veggies, rice noodles and the chili garlic sauce, but had everything else (including chicken).I needed everything for the tilapia tacos on Wednesday, but only needed buns for burger night tonight. I needed almost everything (except spices) for the chicken tortilla soup. But I already had EVERYTHING for the meatballs (I made a HUGE batch a while back and froze the meat in smaller batches for later meals and the broccoli will be from my freezer stash). And for the meatloaf meal, all I needed was the meat and the yeast rolls. I could have skipped the rolls, but DH specifically requested Sister Schubert's rolls- I was glad I had a coupon... and sad that I only had one because they were CHEAP at Kroger this week!

I'm starting to put together my list for next week. I know next weekend I want to make Butternut Squash Soup again... because it was so totally delicious that I ate up all the leftovers REALLY quickly... I didn't waste a drop as I LITERALLY licked my bowl clean most days. Saturday (the 28th) is our party, so we'll have beef and chicken tacos that day, Sunday will be the soup and then on Memorial Day, I think I'd like to have a Low Country Boil.

Yeah, that....well, I shop at Aldi and I went with the cheap stuff in the 1lb bag. I am sure that had a lot to do with it. :guilty: I had hoped Muenster cheese would be a pretty stout tasting cheese to make up for the lack of flavor in the turkey, not so much. Oh well, lesson learned. :upsidedow

Friday: Mexican (Band Banquet for my son)

Monday: BBQ Sandwiches and Chips

Wednesday: Sandwiches, chips, fruit

Y'all all cook such different things and we tend to have the same old, same old. I need to expand my repetoire!

Last night was a kind of a clean out the freezer meal. When those packs of pork chops go on sale I always freeze the scrappy ones separately. My ham loaf was about 1/2 pork and 1/2 ham from the one I bought when hams were on sale at Easter. I grind the two and make it like a regular meatloaf with bread crumbs (freezer!), eggs and seasonings. There's only the two of us at home now so I cooked ours in mini-loaf pans sat in a water bath for about an hour. Twenty minutes before the loaves were done I spooned on a glaze of 1/2 c. brown sugar, ground mustard and a couple of tablespoons of apple cider vinegar.

The mac-n-cheese was a bechamel sauce with all the ends and bits of cheese that I keep in the freezer melted in with ground mustard and Tony Chachere's seasoning. The topping was more breadcrumbs from the freezer tossed with a bit of butter and paprika.

I cooked my green beans pretty much like Gator Mama but I did use some ham broth that I froze when I had that sale ham. That's how I grew up eating them. My family is from south Mississippi and cooked all of their veggies to death. I think I was in college before I realized that a bean could have some crunch! Those particular beans were kind of old and a tad freezer burned-a couple of hours simmering in bacon and ham broth were their only chance to avoid the compost bin :)

Tonight is jambalaya, again.

Tonight we are having sloppy joes with homemade pasta salad. I did our grocery shopping today and between two stores, I spent $54.25 and saved $25.26. Here is what our meal plan is this weekend

Tomorrow- Chicken Pot Pie
Saturday- Cincinnati Chili topped baked Potatoes
Sunday- Puffy Pancakes with Sausage and fruit

I would say on average that about 3/4 of my meals per month are new. That's the reason I started doing the cooking and why I do my meal plans so far in advance. I was SO tired of eating the same things every week! Now when I eat spaghetti, I actually WANT spaghetti.

I can't stand ham, but love ham loaf...go figure. How do you grind the meat? I don't have a food processor. I wonder if I could get the butcher to grind the meat for me?

We have made good use of the sausage- I made sausage and peppers earlier in the week- then I added some of that into my sauce that I made yesterday- *with turkey balls. And tonite I chopped up a couple and made sausage calzones! I streeeeeeeeeeeeetched that sausage into 3 meals! And I still have enough for a sausage and pepper hero for DH's lunch! I might be able to skip shopping this week. I have lots left over from last week. Chicken thighs, some chicken legs- I want to try a rice cooker mac and cheese I read about on Tiffany's blog here's the link to the other blog with the recipe

My mother has meat issues so we grew up grinding our own. My dad does it with a hand grinder but I have this for my Kitchen Aid mixer:
