Hoping for Italian Sausage on the grill, Corn on the Cob, and Cole Slaw for tonight. As long as the worse of the rain stays away. If we can't get out there, then we will have fajitas.
 
Well there is something wrong with Blogspot so I can't post my blog lol! I am making some Hungry Girl Kale chips to snack on and will probably make quick chicken sandwiches for dinner and home made fries. For the weekend it's lasagna with egg plant.

Taco's tonight
Taco salad tomorrow
Sunday sicilian Walmart brand pizza $4.59 and salad.
Monday will be waffles and bacon.
Tues before we leave for WDW I will use the left over bacon to make BLT sandwiches.
 

Tonight I am making chicken and dumplings. I cooked the chicken overnight in the crock pot with carrots, onion, and celery. Then later this morning once it has cooled down I will shred it and use the shredded chicken with the broth and new veggies to make dinner.
 
Ok last night I really made dinner out of nothing. I had 2breads that I had to get out of the freezer(French ones I had made earlier in the week) so I made French bread pizzas! Just cut them in half spread on some sauce and cheese and put them on an olive oiled sheet pan. Baked fo 15 minutes. It was yummy and kept us from ordering out when I didn't feel like cooking!

I am making a variation of the gnochhi and asparagus I made last month. This time I am making a picata like sauce. I will post that later:thumbsup2

My Mom in law used to make something similar where she would spread a ground beef/ egg mixture over french bread and then bake it. Yum! OMG! That pizza reminds me of those Stouffers french pizza's I used to love:thumbsup2 I have some pizza crust so I might make calzones.

Another thing I have to do is make some black beans in the crock pot so I can freeze them into one cup portions. I have to soak them overnight so I will start that tonight.
 
Really nice, cool day here...but the cidadas are insane, yuck!

I would love some suggestions for meals for the hot summer days. I hate to turn my oven on when it is hot out. I do have a small tabletop oven and a crockpot. It is just myself and my son and we both work different hours. I often freeze leftovers for lunch or to grab when we get home.

I love all the menu ideas on this forum! I need to go back to menu planning.
 
Tuesday- Baked Chicken, mashed potatoes and gravy, veg

Weds- Leftovers

Thursday- Hamburgers, linguine salad, fruit salad

Friday- Burritos

Tonight- Ham and potato and corn chowder, bread, watermelon

Sunday- eggplant parmesan, meatballs, angel hair pasta, green beans

Bean salad is a mainstay for us in hot weather. I have a standard recipe that I make a lot, but my son found a new recipe and tried it last week and it was good, so we'll probably make that again.

I also like main-dish salads, with lots of greens, a variety of raw vegetables, and something for protein (we're vegan, so for us it's likely to be chickpeas, black beans, or marinated, cooked tofu, or nuts).

Chili in a crockpot is another good option (in fact, I just made a pot of chili today!).

You could use your small oven (or a microwave, if you have one) to bake potatoes or sweet potatoes, and then have a selection of toppings for them. Maybe add a salad if your toppings don't include a lot of vegetables.

For hot weather meals, my husband loves Chicken Pasta Salad. We'll also make things like quesadillas, cobb sandwiches, grilled cheese (fancy it up a bit), BLTs, Blackbean tacos with avocado & lime (so good!),
 
pasta salads are big for us in the summer, I make a big bowl and we have it for a few days...maybe with some cold cut sandwiches or alone. It cold and filling!

I also make up big bowls of Potato salad or Macaroni salad and really hot days it hits the spot~

I cook one cut up whole chicken either in the crock pot for 4 hours or on top of the stove until done. I strain out the broth and shred the chicken up. I then simmer the broth on the stove and add in carrots, celery, salt, pepper, garlic powder, and onion powder. Once that has cooked I add in the chicken and let that warm together. I then make the dumplings from the recipe on the side of the bisquik box and cook covered for 20 minutes.

It is so good and easy.

That is pretty much my Mom's recipe too. It is good. The dumplings are fluffy and I love when they soak up some of the broth. Mmmmm. I may have to pull some chicken out of the freezer to make some now.lol.

I love all of these things also. Unfortunately, I am one of those people for whom pasta and carbs are a nightmare. It doesn't fill me up and when I do quit, I am hungry 30 minutes later. I wish I wasn't like that. I adore pasta and potato and macaroni salad. But my figure doesn't.
